This University Village bagel shop does one thing obsessively well: baking rounds with crackly, golden exteriors and a chewy, fragrant interior that makes you realize most bagels have been lying to you. Fair warning, they won't slice, toast, or schmear for you. Cream cheese comes on the side for ripping and dipping, New York style. Purists will get it immediately; everyone else comes around fast.

    Progressive Filipino

    Twelve seats, ten courses, and a tasting menu that treats Filipino food as a lens for Pacific Northwest history in ways that somehow feel personal rather than academic. Archipelago is one of those rare spots where the storytelling and the cooking are equally good, which has earned it a James Beard Award. Getting a reservation is notoriously hard, but the crowd that manages it tends to sit very still and pay close attention, which tells you everything.

  100. A Mexican seafood counter inside a brewery sounds like a weird flex, but La Marea pulls it off beautifully. The team came up from LA and brought real heat with them, serving scallop aguachile and silky tuna tostadas to a crowd that came in for the farmhouse ales and stayed for the food. It's casual and buzzy, the kind of place where the beer list and the menu feel like they were made for each other.
