Stefan Wiesner, known locally as the "Wizard of Entlebuch," runs this four-course set-menu restaurant inside the Weitsicht hotel, where the terrace looks out over a stretch of Swiss countryside that makes the drive up feel perfectly reasonable. The kitchen draws from surrounding woods, meadows, and an on-site garden, and everything gets cooked over fire, embers, or smoke. It holds a Michelin Bib Gourmand, and guests who stay the night can forage wild herbs with the chef at breakfast.
