Stucco ceilings, lake views framed by Alps, and a kaiseki menu in a Swiss belle-époque hotel dining room: this is a specific kind of evening. The chef runs an authentic Japanese kitchen, building multi-course kaiseki menus around carefully sourced fish, wagyu, and shellfish. At lunch the format relaxes into something lighter. The terrace in warm months is the room everyone actually wants, even if the interior makes a convincing argument on its own.
