Fire-led fine dining on Jumeirah Beach Road, and one of the better arguments for why Dubai's restaurant scene gets taken seriously. The open kitchen puts the grill front and center, and the whole room orbits around it. Australian beef aged with care, different woods chosen for different results, nothing drowned in sauce or fuss. The crowd leans cosmopolitan and dressed-up, people who know what they came for. It made the World's Best Steak Restaurants list, which tracks.

The only spot in Dubai serving Hanwoo, Korea's most prized native beef, flown straight from the source. It's an upscale Korean barbecue restaurant inside the St. Regis on the Palm, where tableside charcoal grills and restrained, precise cooking do most of the talking. The room is warm and serene, the crowd well-dressed and serious about their meat. Korean side dishes and cocktails built around native botanicals round things out nicely.
