Sitting on the Kowloon waterfront with most of its 400-plus rooms aimed straight at the Hong Kong skyline, this 65-floor luxury hotel holds the top spot on the World's 50 Best Hotels list and three Michelin Keys. Designer Tony Chi folded checked wool, tweed, and Damien Hirst sculptures into something that feels more like a very grand private residence than a tower block. Eleven bars and restaurants, the Asaya spa, and entry-level rooms that start at 53 square metres keep you from ever needing to leave.

Cantonese
Preparing the golden fried chicken here means dousing the skin in hot oil repeatedly rather than submerging the bird, and the difference shows in every crackling, grease-free bite. This is a formal Cantonese dining room inside The Langham, the kind where you pre-order signature dishes and dress accordingly. The kitchen holds three Michelin stars and covers the canon, Peking duck, stuffed crab shell, stir-fried lobster, with technique that makes familiar ground feel considered.

Pillbox-hatted pageboys at the door set the tone before you've even checked in. The Peninsula is Hong Kong's grand colonial hotel, the one locals call "the Pen," where afternoon tea in the gilded lobby comes with a string quartet and petit fours as a matter of course. Rooms run high-tech alongside genuine antiques, the views back across to Hong Kong Island are quietly spectacular, and the staff have a talent for appearing and vanishing at exactly the right moment. Forbes Five Star.

French
A private lift delivers you straight to the entrance, which sets the tone before you've unfolded your napkin. Gaddi's is a grand French dining room at The Peninsula, all gilded accents, chandelier, and blue-and-gold carpet that hasn't needed irony to survive. The menu runs modern classic, distinctly French, and the kitchen holds a Michelin star and a Forbes Five Star. Old-school in the best sense, and never apologetic about it.

The triple-height lobby windows framing Victoria Harbour feel less like a design choice and more like a declaration of intent. This Forbes Five Star hotel in Tsim Sha Tsui came back to its original name after a long run under another flag, and the charcoal-and-cream interiors by designer Chi Wing Lo give it a quieter confidence than its storied past might suggest. Most of the 497 rooms angle toward the water, and the two-Michelin-starred Lai Ching Heen anchors a dining lineup that has always been the real draw.

Floor-to-ceiling windows frame the Hong Kong Island skyline, which does a lot of the work before any food arrives. This is a formal Cantonese dining room inside the Regent, holding two Michelin stars, where the kitchen has kept essentially the same core team for three decades. The cooking runs classic and precise, leaning on clean broths, wok technique, and premium ingredients, the kind of place where the dim sum trolley, if it appeared, would seem wrong.

Goan
The name means "to lick" in Hindi, which sets the tone pretty squarely. This is an upscale Indian restaurant on the fifth floor of the Rosewood, with a Michelin star and a kitchen devoted to taking street-snack culture somewhere the tablecloths are very nice. Regional classics get the refined-technique treatment, tandoor-roasted meats share the menu with butter-rich curries, and the bread situation warrants attention. The crowd dresses up, and nobody seems to mind.

A resident tea master walking the room with rare selections like Tongmuguan Jinjunmei sets the register here: this is a formal Cantonese restaurant that takes the whole meal seriously, not just the food. The kitchen, led by a chef with four decades in the trade, holds a Michelin star and turns out classics plated with quiet precision. Tucked into the lower level of the Kowloon Shangri-La, it draws the crowd that knows to book ahead.

Cantonese
Tucked into the basement of the Eaton Hotel in Jordan, this Michelin-starred Cantonese restaurant has been around forever and shows it, the retro dining room prompting creative explanations involving Wong Kar-wai. Regulars don't much notice; they're too busy with the honey-glazed barbecued pork and slow-cooked soups that have kept the place packed for decades. A devoted crowd fills the room on any given lunch service, and the dim sum menu has seen recent updates for good measure.

Hand-painted ceilings, velvet in gold and burgundy, marble underfoot: this grand luxury hotel in Tsim Sha Tsui wears its Art Deco, old-London personality without apology, even as the streets outside are very much Hong Kong. Rooms carry the same aesthetic but come fully loaded with modern comforts, and the service is the kind that remains patient and polished even when you are neither. Palm Court does afternoon tea on custom Langham Rose china, which sets the tone.

Cantonese
A terrace with a bird's eye view over Victoria Dockside sets the scene at this Michelin-starred Cantonese dining room on the fifth floor of the Rosewood. The CEO built it as a tribute to her billionaire grandfather, though the moody lighting, house music, and closely packed tables read more like a glamorous night out than a family memorial. The crowd skews young and gilded, which is somehow exactly right.

Steakhouse
The charcoal grill has been burning here since the eighties, one of the first of its kind in Hong Kong, and it remains the whole point. This is a hotel steakhouse inside the Regent, with harbour views over Victoria and a beef programme that dry-ages cuts from Japan, Australia, the US, and beyond. The salad bar is a fixture regulars treat as seriously as the meat. It ranked 80th on the World's Best Steak Restaurants list.

The dessert trolley alone tells you what kind of place this is: old-school, unapologetic, and not about to start plating things in smears. Sabatini is a Roman-style trattoria that has been feeding Hong Kong its lasagne bolognese and ossobuco for longer than most of its neighbors have existed, with faded murals, porcelain vases, and a live band most nights giving the room the feel of a Roman holiday that never quite ended.

The Vivienne Tam suite on the 27th floor has an Opera Girl portrait made of Swarovski crystals and a ceiling modeled on a Chinese screen, which tells you exactly what kind of hotel this is. A roster of design names, Sir Terence Conran among them, was brought in to give every corner a point of view. The 262 rooms face Victoria Harbour, and the whole place takes its own aesthetic ambitions very seriously, in the best possible company.

A 110-foot atrium stuffed with indoor gardens sets the tone at this Tsim Sha Tsui hotel, where the design leans hard into natural light and element-inspired calm. The rooms keep that logic going with blond-wood desks and pale linen, and the rooftop pool looks improbably tropical given the financial district address. Victoria Harbour views are the other draw for anyone who isn't here to close a deal.

Japanese
A Japanese cocktail bar split across two floors of a Kowloon office building that is, for reasons no one fully explains, almost entirely occupied by Japanese businesses. Light wood and leather keep things low-key on the fifth floor, where the classics menu does most of the work. One floor up, the whisky bar runs deep and eclectic. The lift connecting them is the building's only one, so factor that into your pace.

Italian Steakhouse
Dario Cecchini, the famously theatrical Tuscan butcher, brings his nose-to-tail philosophy 39 floors above Tsim Sha Tsui in this Italian steakhouse inside the Mondrian. Dry-aged cuts from Italy, Australia, and the US go over charcoal, and the kitchen works the whole animal rather than just the obvious luxury parts. Harbour views, a strong cocktail program, and service that feels festive rather than formal round things out. It ranks among the World's Best Steak Restaurants.

Every room has a balcony, and many look straight across the water to Hong Kong Island, which is a good start. K11 Artus is a residential-style luxury boutique hotel on the Tsim Sha Tsui waterfront, designed by André Fu for a founder whose art foundation has spent years weaving Chinese contemporary art into the global conversation. The artworks and the light switches get equal attention here. Dining comes from the wider Victoria Dockside development right outside.

The triangular silhouette was already a Tsim Sha Tsui landmark before the Mondrian moved in, and the brand leaned into the curving walls and angled corridors rather than fighting them. This design-forward hotel treats the whole building as a canvas, from mosaic-lined gallery spaces in the lobby to wraparound harbor views on the upper floors. Nautical rugs, terrazzo floors, and wooden sewing boxes full of snacks nod to Hong Kong's tailoring history without being fussy about it.

Painted-on chandeliers and trompe l'oeil fireplaces set the tone at this Tsim Sha Tsui design boutique hotel, which is essentially a very well-executed joke about luxury hotels that also functions as a luxury hotel. The cartoonish mock antiques and aggressive gold paint are the point, not an accident. Service is solid, the location in Kowloon works, and the rooms come with smartphones included. It is hilarious and the LCD televisions still work fine.

Rooms at this sleek Tsim Sha Tsui hotel look out over Kowloon Park rather than the harbor, which turns out to be the more interesting view. Inside, the design swings from swooping lobby curves to mid-century suites fitted with Arne Jacobsen egg chairs and terraces wired for outdoor sound. Three restaurants, a palm-fringed rooftop lounge with weekend DJs, and a spa with an infinity pool and color-therapy showers fill out whatever time remains.

The lobby is dressed like a 1950s Hong Kong sound stage, which tells you everything about Hotel Madera's priorities. This boutique hotel in Jordan leans hard into character, with zebra-print carpets, near-monochrome Art Deco rooms alongside earthy neutrals, Bisazza-tiled baths, and goose-down duvets. City views sharpen as you climb the floors, and the rooftop lounge trades on exactly that. Jade Market and Temple Street are a short walk away.

A hotel that earns its Michelin Guide selection by threading the needle between sleek and local: the minimalist interiors, all neutral tones and oversized windows, are hung with work by Hong Kong artists and craftspeople. The all-day restaurant leans Italian, the wine bar goes dark and clubby, and the neighborhood does the rest, with Tin Hau Temple and the Temple Street Night Market a short walk away.

Edomae Sushi
Jazz plays softly at this 12-seat cypress Edomae sushi counter in Tsim Sha Tsui, where the mood is warmer than the typical hushed reverence the format usually demands. The chef trained for over a decade under a Japanese sushi master and now nudges tradition with Hong Kong instincts, using dual vinegars on the rice to suit each fish. Toyosu fish arrives daily. Sake is on the menu, and so are tequila highballs, which tells you something about the room.

The harbor views from the 17th floor set the tone before anyone opens a menu. Aqua is a date-night restaurant that splits its personality evenly between Italian and Japanese, so the table beside you might be ordering sushi while yours lands a lobster pizza. Cocktail Bar
Thirty-eight floors above Tsim Sha Tsui, a neighborhood with no shortage of pints and very few proper cocktail bars, Avoca makes a case for both altitude and effort. Mongolian-style hotpot is the whole point here, specifically the shuan yang rou, a slow-braised mutton pot that pulls diners down to the basement of The Royal Garden for something you won't find on most Hong Kong menus. Wood-fired ovens and a charcoal grill do most of the talking at this hotel steakhouse on the fifth floor of Rosewood Hong Kong, where dry-aged heritage-breed beef arrives tableside, sometimes flambéed in whisky, which is exactly as theatrical as it sounds. Modern Cantonese
Eight seats, one tasting menu, modern Cantonese cooking shaped by stints at Amber, Mono, and Écriture. The chef built the kind of résumé that usually ends in a bigger room, then went the other direction entirely. Small rooms tend to mean the kitchen has something to prove, and this one seems to know it.

Cocktail Bar
The semi-rooftop perch on the fourth floor of Eaton HK makes this cocktail bar feel like a secret the rest of Kowloon hasn't fully found yet. It's the kind of bar where the menu has clearly been thought through by someone with something to prove, in the good way.
