A Molteni stove set into a slab of Carrara marble anchors the open kitchen at the center of this two-Michelin-starred contemporary French tasting menu restaurant on the 61st floor. Bangkok spreads out below while the chef, formerly of Hong Kong's Caprice, sends out plates so graphically composed you'd call it art, though he'd call it cooking.
