The chef was born in Tokyo and trained across several countries, and the seasonal set menu moves through that whole journey in a single sitting. The drinks pairing ranges across wine, beer, and sake, which is more interesting than a straight Burgundy list, even if that list is also there.

Smoke from the binchotan charcoal is the first thing you notice, before you've even sat down. This is a yakitori restaurant from Tokyo, and the kitchen is open in the middle of the room so the whole meal doubles as a floor show of skewers and coal. The team works through the whole bird, beak to tail, in far more configurations than seems reasonable for one animal. The chicken liver pâté with warm baguette is a genuine curveball worth ordering.
