Rank 412. Alegria
Latin American Cocktail Bar
A cocktail bar inside Bryant Street Market's food hall in Edgewood, Alegria spun out of a beloved 14th Street agave spot and kept the Latin spirits focus while widening the net. Hibiscus, cacao, and fresh fruit make their way into the drinks alongside a beer list that moves from Pacifico to a Hyattsville local. Canned cocktails go out the door for those who can't be contained to 26 seats.

Rank 412. Barbouzard
Southern French Mediterranean
The gougères come with a side of Comté fondue, because why not gild the lily twice. Barbouzard is a glitzy Southern French dining room from Cédric Maupillier, and it reads more Riviera than Washington, which is the whole point. The deconstructed bouillabaisse and plancha scallops in curry sauce show a chef having fun with the format. At lunch, the K Street crowd fills in around a brisk prix fixe that moves fast enough to make a noon reservation feel civilized.

Lamb and chicken skewers come off the coals heavy with cumin at this Uyghur restaurant tucked into an Arlington strip mall. The skewers are the draw, but the menu around them pulls equal weight: flat noodles in tart red broth, cold noodles sparked with chili oil, and a beef-and-onion stuffed flatbread that regulars tend to order twice. The New York Times named it one of D.C.'s 25 best restaurants.

Rank 412. Brasserie Royale
French
The onion soup follows Julia Child's recipe and nobody has touched it, which tells you something about the kitchen's instincts. This casually elegant French bistro in Sterling plays with the classics just enough, turning tuna tartare into something that reads like steak, serving Brie crispy, while leaving the soul of the thing intact. The Washingtonian named that tartare one of their favorite DC-area dishes of the year.

Rank 412. Bread Alley
Bakery
The six bakers here clock in at 3:30 a.m. to supply Le Diplomate's bread program, and the public gets to buy the same loaves from a 100-square-foot alley shop tucked into the Union Market district. It's a tiny bakery with a serious output: baguettes, multigrain levain, cranberry walnut boules, viennoiserie, and a rotating cast of specialty breads, plus local jams and honey to take home with them.

Rank 412. Chay Restaurant
Vegetarian Vietnamese
The "clam" dip is made from tofu, the fried fish contains no fish, and somehow none of that feels like a compromise. This vegetarian Vietnamese restaurant in Falls Church is where the chef makes her own faux meats and seafoods from scratch, turning lemongrass noodle soup and papaya salad into fully convincing arguments that the meat was never the point. Devout carnivores tend to figure this out about halfway through the meal.

Contemporary Mexican
Hand-pressed tortillas made with nixtamalized heirloom corn anchor the menu at this contemporary Mexican restaurant in Takoma Park, where vegan-friendly cooking doesn't mean compromising on ambition. Tres moles fill the enchiladas, cashew cheese goes into the quesadillas, and the bar runs inventive mezcal and rum cocktails alongside margaritas. Brunch draws a crowd too. The team recently moved into sleeker new digs up Carroll Ave, and the upgrade shows.

Rank 412. Hijos del Maiz
Oaxacan Taqueria
A taco trailer parked at a Shell station in Rockville, where the chef mills his own masa on-site and builds the whole menu around it. Tacos, tostadas, and triangular tetelas stuffed with refried beans come out of an operation this small with a focus you'd expect from somewhere twice the size. The chef trained in Oaxaca, grew up in Montgomery County, and clearly has something to prove about corn.

Rank 412. Izakaya Seki
Japanese
The kitchen counter of this Japanese rowhouse izakaya seats you close enough to watch the grillwork happen in real time. The menu runs to sashimi, grilled collars, and hand-doodled specials that change on a whim, sake descriptions written for humans rather than sommeliers, and on Tuesday nights the upstairs flips into a natural-wine bar that hospitality workers seem to have claimed as their unofficial break room.

Rank 412. Kuya Ja's Lechon Belly
Filipino
Pork belly rolled tight with lemongrass and garlic, skin so crisp a fork won't crack it on the first try: that's the draw at this fast-casual Filipino counter in a Rockville strip mall. The lechon belly comes in sandwiches with atchara, over rice, or paired with other meats from the chef's rotation. Save room for desserts from the pastry shop run by his sister next door. The New York Times put it on its D.C. restaurant list, which tracks.

Rank 412. Kyojin
Sushi
Edible flowers scattered across the rolls give away that this Georgetown sushi spot isn't playing it straight. Tucked into Cady's Alley, Kyojin is the flashier sibling of an Arlington raw fish staple, with a full kitchen that lets the Bangkok-born chef push into hot izakaya territory alongside the maki. Truffle wasabi and torched wagyu over uni are the kinds of details that either excite you or make you very tired, depending on the day.

Japanese
Fewer than twenty seats, one chef, seven courses, and a kitchen so quiet you can hear the thinking. Nasime is an intimate Japanese tasting room in Old Town Alexandria where the Ginza-trained team runs a set menu that moves through seasons rather than trends. The pacing is unhurried, the combinations are precise, and the sashimi course arrives with a buzz-button flower that earns its spot on the plate.

Rank 412. Northwest Chinese Food
Chinese
Knife-cut noodles made in-house anchor the menu at this casual College Park storefront serving the bold flavors of northwest China. Mouth-numbing red chilies and black vinegar show up everywhere, from chili-oil dumplings to griddled flatbread sandwiches. Kumquat lemon tea and sour-plum juice are on hand for anyone who underestimated the heat. The University of Maryland crowd has clearly done the math on the price-to-fire ratio.

Rank 412. Pho Thin
Vietnamese Noodle Shop
Pho Thin is a pho shop whose signature move is wok-searing ribeye in garlic before it ever meets the bowl. The broth leans savory rather than the sweet, star-anise-heavy style common around DC, and the noodles are wide and chewy instead of threadlike. The Falls Church outpost of a Hanoi institution, it arrived already pulling crowds. Order the pickled raw garlic that comes to the table and don't leave it untouched.

Rank 412. Pupuseria Mamá Emilia
Mexican
A Salvadoran pupuseria in a Rockville strip mall, run by a family whose roots in the craft go back a generation in El Salvador. The menu runs nearly 30 styles, from the classic cheese-and-chicharrón to shrimp with mint and kale, all served hot off the griddle and freshly blistered. The New York Times put it on their D.C. restaurant list. Come at breakfast and order the signature pupusa with eggs in a red sauce that has no business being that good.

Rank 412. SakuSaku Flakerie
Japanese-infused French Bakery
French technique meets Japanese flavors at this Cleveland Park bakery, where cruffins come filled with lychee and grapefruit and the matcha shows up in mochi rolls alongside lavender. The pastry case leans into seasonal and Japanese ingredients in a way that feels less like a gimmick and more like a genuine point of view. Weekend mornings draw a line worth joining, even if you tell yourself you're just stopping in for coffee.

Rank 412. SER Restaurant
Spanish
Whole roast suckling pig, ordered tableside with enough ceremony to make your neighbors jealous, is the move at this Spanish tapas restaurant in Ballston. The co-owner, Spanish himself, infuses his own spirits, and the gin and tonic is the kind of thing that makes you question every gin and tonic you've had before. Paella, croquetas, and a raw bar round things out, and the patio catches a breeze when the weather cooperates.

Rank 412. Seylou Bakery
Bakery
The in-house stone mill sets Seylou apart from every other bakery in D.C., whole grains going from kernel to loaf under one roof. The team ferments the dough and bakes in a wood-fired oven imported from abroad, which explains the crust on those pain au levain loaves. Mornings bring whole grain croissants and an espresso bar, and on Wednesday nights the sourdough becomes the base for pizza, which is either a great idea or a threat to your routine.

Rank 412. Show of Hands
Cocktail Bar
A cocktail bar tucked inside the Roost food hall on Capitol Hill, Show of Hands leans hard into herbal liqueurs and brown spirits, with a menu organized by mood rather than spirit. The low-ABV side of the list is taken seriously, not grudgingly. Pop-up menus occasionally pay tribute to celebrities, which sounds gimmicky until you realize the drinks are the point and the theme is just the excuse to show up.

The omakase counter seats just two parties a night, each with a dedicated chef and a spread of peak-season seafood arranged in lacquered boxes you pick from yourself. It's a full Japanese restaurant in Dupont Circle that runs from handmade udon to grilled black cod, but the nigiri is the point, along with a specials list that turns up geoduck and cod milt when the season cooperates.

Rank 412. Tiffin Hut
Indian
The benne dosa here folds like a quesadilla rather than rolling into a cylinder, which tells you this is Bangalorean, not generic Indian. It's a casual dosa counter in a Herndon strip mall that somehow has the quiet confidence of a place that doesn't need to explain itself. The butter-lacquered exterior crisps up hard while the inside stays soft with masala potatoes and podi, a coarse spice mix that the Washingtonian named among its favorite dishes of the year.

Rank 412. Trouble Bird
Cocktail Bar
Disco balls overhead and frozen tiki drinks on the menu: Navy Yard's 40-seat cocktail bar came out of a wine bar conversion and has been making noise ever since. The team behind it includes alumni of Silver Lyan, and the house Sazerac riffs on an everything bagel with sesame aquavit and chive gomme, which sounds like a dare and sells out anyway. A neighborhood crowd fills the small room fast on weeknights.

Pizzeria
The long-fermented dough is the tell at this casual pizzeria: the crust has enough flavor that people actually finish it. Deck-oven pies share the menu with Italian-American standards like arancini, and the room draws the kind of crowd that orders feta ranch with chili oil on the side without needing to be told it exists. Two locations in Navy Yard and Shaw, with a counter-service slice shop in Bethesda if you're heading that direction.

The counter-service offshoot of All-Purpose's DC locations, AP Pizza Shop runs a leaner menu than its siblings but holds two things they don't: pizza by the slice and a chicken-parm sandwich that reportedly requires planning around. The deck-oven pies use long-fermented dough, which makes the crust worth eating on its own. Order the feta ranch with chili oil for dipping and pretend it was your idea.

Rank 490. Arrels
Modern Spanish
The mollette, a pulled-oxtail sandwich with pickled vegetables and a sherry glaze, sits next to lobster and oysters on a menu that refuses to pick a lane, which is very much the point. Arrels is a modern Spanish restaurant where the cooking runs from rustic to refined without apology. The fideua, made with vermicelli, Manchego, jamón, and truffle cream, gives you a reason to linger well past the bread course.
