The 47 Best Ramen Shops in the World

Sections

Tap another section to add it. All sections

Broth, tare, noodles, toppings: four parts, endless arguments. Tonkotsu, shoyu, shio, and miso, from 10-seat counters to shops with a line around the block. These are the ramen shops the critics and guides have singled out, ranked by the honors behind each bowl.

  1. Rank 1. Noodle in a Haystack

    Modern Ramen Shop

A ramen omakase in the Richmond where the noodle is the main character, not a supporting act. The team built their name through pop-ups and global competitions before landing in this small corner space, and the tasting menu shows the range, broths that shift from delicate to deeply rich across several courses. It runs at a fine-dining pace and price, so dress one notch up from your usual bowl-of-ramen energy.

  2. Rank 2. Menya Rui

    Ramen Shop

The noodle machine has its own little vestibule off the dining room, which tells you where priorities lie at this 24-seat ramen shop. The chef spent years in Japanese noodle kitchens before opening here, and it shows in the tsukemen, thick cold noodles you dip into hot broth, and the brothless mazemen tossed in scallop or chile oil. Food & Wine named him a Best New Chef. The line out front moves faster than it looks.

  3. Rank 3. Kajiken

    Japanese Noodle Shop

The bar seats face a glass-walled noodle room where someone is forever converting spools of dough into the springy, house-made strands in your bowl. Kajiken is a Japanese soba shop specializing in aburasoba, a brothless style where oils and sauces do the heavy lifting instead. The concentrated flavor catches you off guard the first time. A table caddy of vinegar, hot sauce, and powdered nori lets you keep adjusting until it's exactly right. Expect a line at peak hours.

  5. Rank 4. Ramen Break Beats

    Japanese Noodle Shop

The chef used to be a DJ, and the name isn't just branding: the break-beats philosophy shapes the playlist and, apparently, the pacing of a bowl. This Meguro ramen shop holds a Michelin Bib Gourmand, and the draw is a soy-sauce broth that runs clear and clean in a way that makes you wonder what everyone else is doing with theirs. Compact, focused, the kind of counter you leave slightly amazed that lunch cost so little.

  6. Rank 4. Ramen Nagi

    Japanese Noodle Shop

The line snaking through downtown Palo Alto at noon is the surest sign this ramen shop is doing something right. A Tokyo-based chain with a cult following, it serves rich tonkotsu broth in five varieties, each bowl customizable down to noodle firmness and salt level. The red king, centered with a blazing eye of miso pork and cayenne, is the one people queue for. No reservations, but you can order while waiting, so you sit down to a bowl almost immediately.

  7. Rank 7. Ivan Ramen

    Ramen Shop

Ivan Orkin, a New Yorker who built his reputation running ramen shops in Tokyo, brought the whole project back home to the Lower East Side. The ramen shop is compact and casual, counter seats facing the kitchen, with a menu that mixes Japanese technique and New York personality without making a big fuss about either. The tsukemen, where you dip thick fresh noodles into rich pork broth and season to taste, rewards the curious. Grub Street named it one of the city's best restaurants for kids.

  9. Rank 9. Damtaek

    Ramen Shop

A quiet alley off Hapjeong, a room full of vintage odds and ends, and one chef who has spent his career obsessing over shio ramen. The broth is clear and precise in a way that makes the cozy, cluttered setting feel like a deliberate joke. It holds a Michelin Bib Gourmand, and the menu stays narrow by design. Come for the soup, plan to sit with it longer than you expected.

  11. Rank 9. Nudo House

    Ramen Shop

The broth in the tonkotsu is described as the color of the inside of a cloud, which is the kind of detail that earns its place. This ramen and pho shop was built with serious intent: the team behind Vietnamese institution Mai Lee brought in a renowned ramen consultant and worked with Sun Noodle on the recipe. Seven ramen styles anchor the menu, with pho, banh mi, and crab rangoon filling out the rest. A thorough lunch.

  12. Rank 9. Tonchin

    Authentic Ramen Shop

The tonkotsu broth here is pork-forward but never heavy, which sounds like a small thing until you've slogged through a bowl that coats your throat like spackling compound. This Tokyo-based ramen shop in Midtown pulls its noodles in-house, and they hold their spring all the way to the bottom of the bowl. The Michelin Guide awarded it a Bib Gourmand. The room is sleek enough for a working lunch and relaxed enough for a slow dinner.

  16. Rank 14. Super Kyuramen

    Ramen Shop

The two-story honeycomb dining cubes and a lantern-lit alleyway of themed rooms give this Chinatown ramen and izakaya spot the feel of a Tokyo side street you stumbled onto by accident. Ramen bowls anchor the menu, but the kitchen also sends out dumplings, takoyaki, bao buns, and yakitori alongside sake, Japanese beer, and a full bar. It's a lot of fun for a Tuesday.

  17. Rank 17. Fuji Ramen and Sushi

    Modern Ramen Shop

    The awards

  18. Rank 17. Marufuku Ramen

    Japanese Noodle Shop

Marufuku is a ramen shop on the second floor of Japantown's Japan Center mall, and the line snaking out before they open tells you everything about how the neighborhood feels about it. The Hakata-style tonkotsu runs cloudy and deep, with thin noodles and slow-cooked pork belly. The chicken paitan is lighter but no less serious. Expect a wait, and consider using that time to decide whether you're ordering the deluxe.

  19. Rank 17. Ramen Champ

    Japanese Noodle Shop

Jiro-style ramen is the calling card here, a Tokyo-born style less famous in the Bay Area than tonkotsu but arguably more interesting, with its shoyu-pork broth running fattier and more rustic, pork fat globules and all. The thick, chewy noodles come from a local craft purveyor, and a fistful of raw chopped garlic goes in to sharpen everything up. This San Jose ramen shop is doing real work diversifying a scene that tends to default to the same few styles.

  20. Rank 17. Ramen Hajime

    Japanese Noodle Shop

A ramen shop in a Santa Clara strip mall run by a chef who keeps a tight grip on his broths, making the noodles in-house and letting clean, well-built basics like a smoky shoyu do most of the talking. The real reason regulars check the calendar is the rotating specials, which have swung from crab ramen finished with pistachio oil to buckwheat noodles built around dried red snapper. The San Francisco Chronicle puts it among the Bay Area's best.

  21. Rank 17. Shugetsu

    Japanese Noodle Shop

Smoke hangs in the air from the moment you walk into this small ramen shop in Fremont, which is a pretty good preview of what's coming. The specialty is tsukemen, where thick chewy noodles and a deeply concentrated dipping broth arrive separately. When the broth runs low, ask the staff to top it with hot chicken stock. The San Francisco Chronicle named it among the Bay Area's best ramen spots, and the smoke and pork anchovy depth make a reasonable case.

  22. Rank 17. Taishoken

    Japanese Noodle Shop

Tsukemen is the format here: chilled house-made noodles served separately from a thick, concentrated broth so gelatinous it coats every strand on contact. The broth, built from chicken, pork, dried anchovies, and bonito, is intense enough that you can ask for dashi to thin it for sipping once the noodles are gone. This San Mateo shop is the first U.S. location of an old-school Tokyo institution credited with popularizing the style.

  23. Rank 23. Akahoshi Ramen

    Ramen Shop

Akahoshi is a small, casual ramen shop in Logan Square run by a guy who built a following as "Ramen Lord" before ever owning a stove. The menu is four items long, two with soup and two without, so deliberation is brief. The noodles are made in-house, Sapporo-style, and the specials rotate monthly into ramen styles you've probably never had to pronounce. It's a ramen shop with a fan club, and the fan club has opinions.

  25. A ramen bar tucked into Madrid's Literary Quarter, where the chef brought serious New York kitchen time to a menu that leans hard on umami. Three rotating ramens anchor the list, with a brothless option always among them, and the baos and eggplant mapo hold their own alongside the main event. The room fills fast, and walk-ins rarely find a seat, so booking ahead is the move rather than the gamble.

  26. Rank 23. Jimoto

    Ramen Shop

The Bowl Club membership tells you everything: this is a ramen shop with regulars who show up multiple times a week and never look at the menu. Jimoto does tonkotsu, soup dumplings, and poke in a town where most restaurants treat a reservation like a moral commitment. Low-key, no-fuss, and one of the few places in Aspen that does takeout well, which matters more than it sounds in a city with basically no food delivery.

  27. This is a casual ramen shop in the Eddy Street Commons strip just south of Notre Dame, which explains why a former Cowboys linebacker co-owns it and why current players wander in between practices. Expect creamy tonkotsu in a bowl, a few spicier takes on it, and a bar program with a smoky old fashioned for the post-game crowd. Dessert is a layered crêpe cake, if you've got room after the noodles.

  30. Rank 23. The Wrap

    Ramen Shop

A casual soup-and-salad counter on Water Street that hides an unexpectedly pan-Asian menu behind a straightforward downtown cafe face. The ramen comes with jalapeño heat and a choice of vegan or bone broth, rice bowls run with house teriyaki and toppings like unagi or kimchi, and fresh smoothies offer a gentle reprieve from the chile-everything intensity of the surrounding city.

          Best Place Score

The Best Place Score rates the area around a point, not any one place. The places are 60% of it: the best of what's within reach, weighed by distance. The setting is the other 40%: how life goes in that country (how people rate their own lives, how long and how well they live, how safe they are) and what it's like right there (the air, and the weather). If the score looks low, we probably haven't found enough critics out here yet.
