  1. Rank 1. Don Julio

    Steakhouse

The wine bottles covering the walls have handwritten notes from past diners, and there are 60,000 more in the cellar below. Don Julio is a Palermo parrilla where the beef is farmed, butchered, and aged in-house, then finished over white quebracho charcoal on a V-shaped grill. It holds a Michelin star and sits at number ten on the World's 50 Best list. Book months ahead, or join the queue and accept the empanadas.

  2. Rank 2. 11 Woodfire

    Steakhouse

A converted Jumeirah villa where the open grill isn't decor, it's the whole argument. This is a modern fine dining restaurant built around wood fire, with oak, hickory, and hay chosen for the specific character each one lends to meat, seafood, or vegetables. The room has that minimalist industrial look, the kitchen is fully visible, and the drinks list is zero-proof but seriously considered. It holds a Michelin star and a spot on MENA's 50 Best.

  3. Rank 2. COTE

    Korean

Cuts of USDA Prime, American Wagyu, and Japanese A5 hang in a visible aging room before they ever reach the grill built into your table. This is a Korean barbecue steakhouse in the Flatiron, dark and moody in the way that only feels intentional when the service is this precise. Staff do the grilling, which sounds like a gimmick until it isn't. Holds a Michelin star and ranks among the World's 101 Best Steak Restaurants. The wine list is quietly serious about value.

  4. Steaks seared under an overfired broiler, then brushed with pastrami tallow butter: that's the move at Linny's, David Schwartz's fine-dining Jewish American steakhouse on Ossington. The mid-century dining room runs to white linen, golden light, and banquettes comfortable enough to make you order another round. The bar's eight seats have their own scene, with cocktails that fold deli ingredients into the classics in ways that are more clever than they sound.

  5. Rank 5. Sunny’s Steakhouse

    Modern Steakhouse

Stone crab claws and bone marrow vinaigrette on a classic steakhouse menu is a pretty good summary of what Little River is doing right now. Sunny's leans into the old-meets-new Florida aesthetic hard, and the room hums with a crowd that dressed for it. The steaks come in shareable or individual cuts, the sides include russet potatoes fried in chicken schmaltz, and the martini program landed on Esquire's national list. The New York Times put it on their Restaurant List for 2025.

  7. Rank 6. Fat Rabbit

    Steakhouse

The charcoal grill and the in-house butchery program share equal billing here, which tells you everything about how this casual steakhouse and butcher shop in St. Catharines thinks about meat. Whole-animal, all-Ontario, zero-waste is the operating philosophy, so the charcuterie board arrives with the same seriousness as the wood-fired steaks. On the way out, the fridges are stocked with guanciale and pork ragu for those who can't let go. A Michelin Selected Restaurant that landed on the World's Best Steak Restaurants list.

  8. Rank 6. Isidore

    Steakhouse

A live-fire hearth anchors the open kitchen at this midcentury modern restaurant in San Antonio's Pearl District, where the menu is organized around Texas ingredients and built for sharing, with a dedicated steak section and a Texas-focused wine list. The name nods to the patron saint of farmers, and the sourcing follows through. It holds a Michelin star and landed on the New York Times Restaurant List in 2025.

  9. Rank 6. Niku Steakhouse

    Japanese Steakhouse

A shiny gold door opens into a wood-lined steakhouse where a binchōtan robata grill does most of the talking. The team runs a whole-animal butchery program, wet- and dry-aging US Prime and American Wagyu before anything goes near the coals, which explains the queue for the 18-seat chef's counter. Prices are serious. So is the fire. Niku holds a Michelin star.

  10. You walk in through a butcher shop, past cured meats and niche pantry goods worth lingering over, before finding the dining room tucked behind it all. At this Michelin-starred restaurant, meat is the main event, sourced regionally and from further afield, with a menu that moves between classic preparations and more inventive ideas. Wine bottles line the walls, and the cellar behind them is serious business.

  11. Rank 11. Carcasse

    Steakhouse

The dry-ageing cabinet sits dead center in the dining room, not tucked away in a corner but right there, doing its slow, patient work in full view. Carcasse is a Michelin-starred meat restaurant on the Belgian coast, grown directly out of the butcher's shop next door, and the cooking follows that logic: charcoal heat, restrained sauces, vegetables that complement rather than compete. It holds a spot on the World's Best Steak Restaurants list.

  12. Rank 11. CUT by Wolfgang Puck

    Modern Steakhouse

This is a Wolfgang Puck steakhouse inside the Shoppes at Palazzo, the sort of place where the wagyu comes from Hokkaido and Australia and the check comes from a much higher power. Expect jackets, expense accounts, and a dining room built for closing deals or pretending to. The Japanese beef burger gets you the same pedigree without the second mortgage, and the man himself occasionally works the room.

  13. White tablecloths, glossy wood paneling, and a wine list that earned a spot in Wine Enthusiast's Restaurant Hall of Fame: Pappas Bros. is the kind of old-school steakhouse that doesn't need to update anything. The menu keeps appetizers brief on purpose, saving the appetite for prime, in-house dry-aged cuts seared the right way. Veteran waiters and sommeliers treat everyone the same whether you're ordering a Shiner or a 1947 Petrus.

  14. Follow the smell of barbecue down an alley stacked with firewood and you'll find the front door. Inside, Matty Matheson's steakhouse is all maple slats, a domed ceiling, and salmon-pink booths, which sounds like a lot until you're sitting in it. The menu moves from Sicilian crudo and tartares through big dry-aged cuts cooked on the grill, with vegetable sides that quietly refuse to be an afterthought. Krug by the glass, if you're in the mood.

  16. The upstairs dessert room, a separate posh chamber with live piano and house-roasted coffee, tells you everything about how seriously this old-school Tampa steakhouse takes a night out. Suits on the floor, garish vintage décor everywhere, and a wine collection so large it earned a spot in Wine Enthusiast's Hall of Fame. The dry-aged prime steaks are the move, but save room: the bananas Foster upstairs is practically the point.

  17. Rank 16. Born and Bred

    Steakhouse

The restaurant sits one floor above Seoul's Majang Meat Market, which is less a detail than the whole point. Born and Bred is a butcher-led beef omakase built around Hanwoo, Korea's native cattle, selected and aged by someone who grew up inside the trade. Binchotan charcoal does the cooking with a restraint the beef seems to expect. It ranked 26th on the World's Best Steak Restaurants list, and the counter keeps seatings small enough that each cut arrives as a considered choice.

  18. Rank 16. Portal

    Steakhouse

A blackboard listing dry-aged beef cuts is the first thing worth studying at Portal, a well-worn neighborhood restaurant near Sankt Eriksplan that draws a devoted lunch and dinner crowd. The chef's Paris pedigree shows in the precision, but the room feels genuinely Swedish, right down to the artisan beer and the rotating game. Bar Portal next door handles small plates and a longer wine-by-the-glass list when the mood calls for it.

  19. Rank 16. SAMMARCO

    Italian Steakhouse

Oxblood leather banquettes, marble everywhere, and a cocktail trolley that arrives tableside bearing elaborate Martinis: Sammarco is Toronto's Italian steakhouse at full volume. The five Ontario dry-aged cuts are the backbone, sourced from Cumbrae's and treated simply, but the menu wanders into grilled sweetbreads and snow crab risotto for those who came for more than beef. The wine list runs long and expensive. Dress accordingly.

  20. Rank 16. SW Steakhouse

    Steakhouse

  21. Rank 16. SW Steakhouse

    Steakhouse

Lakeside tables at this swanky steakhouse inside Wynn look out over a waterfall and light show, which gives the white-tablecloth setting a slightly surreal edge. The menu hits every chophouse note, but the draw is the beef program: true Japanese Kobe from Hyogo alongside American wagyu, both with the kind of marbling that makes a menu feel like a financial decision. 22. This is a José Andrés steakhouse inside The Venetian, and the open kitchen is basically a stage for a very large fire. Bone-in wagyu ribeyes get charred there, while the menu also stocks Ibérico ham and an aged-cow beef most steakhouses skip. Caviar comes in single-bite cones, which tells you about the tax bracket. Dress like you're celebrating something, since most tables are.

  23. Rank 22. Capa

    Spanish Steakhouse

On the 17th floor of the Four Seasons Orlando, Capa is a Spanish-leaning steakhouse where the view over the resort competes hard with the menu. Michelin one-starred, it spans gambas, sherry-braised mushrooms, and substantial bone-in ribeye, with a pastry program that turns gazpacho into dessert. The setting pushes it toward celebration territory, and the crowd dresses accordingly.

  24. Rank 22. CUT

    Steakhouse

Wolfgang Puck's steakhouse inside the Four Seasons on Wilshire is the kind of room where the banquette seating and the beef grades arrive with equal seriousness. Cuts run from American prime to Australian Wagyu to Japanese A5, and the price of your entrée will make this feel like a consequential evening regardless of what's being celebrated. The crowd tends to be well-dressed and on somebody's expense account.

  25. Rank 22. Elisa

    Steakhouse

A custom wood-fired grill anchors the room at this Yaletown steakhouse and bar, open flame flickering against warm wood tones while the kitchen runs tartares alongside Canadian and wagyu cuts. The butcher shop next door feeds the kitchen's sourcing philosophy. It holds a spot on the World's Best Steak Restaurants list and took Vancouver Magazine's Restaurant of the Year. Dress up a little; the room expects it.

  26. Rank 22. Knife & Spoon

    Steakhouse

Chef John Tesar's chophouse inside the Ritz-Carlton Grande Lakes fills a large, dimly lit room done in weathered wood and beachy tones, with an open kitchen in the back and a well-stocked bar up front. Dry-aged steaks share the menu with top-shelf seafood and pastas that take a turn nobody saw coming, cacio e pepe made with ube noodles being the kind of detail that earns the conversation. The cocktail list keeps pace.

  27. Rank 22. Niño Gordo

    Asian Steakhouse

A giant baby-shaped balloon floating above the entrance is how you find this Asian-Argentine restaurant in Palermo Soho, which tells you something about the room before you walk in. Everything inside is red, hung with lanterns, and loud in the best way. Argentine ingredients meet Japanese, Korean, and Thai technique, landing on a #21 spot on Latin America's 50 Best list. Sit at the bar facing the kitchen if you can.

  30. Rank 30. AG

    Steakhouse

A former silver factory in Kungsholmen, now home to one of Stockholm's serious steakhouses. The in-house butcher shop and ageing room are visible from the dining room, which is either very honest or very confident, probably both. Swedish dairy cow aged up to 90 days is the signature, though the list runs to Galician old cow and Japanese A5. Ranked eighth on the World's Best Steak Restaurants list, which narrows the crowd considerably.

  31. Rank 30. Beef Club

    Steakhouse

A steakhouse perched at 1,400 meters in the Austrian Alps, holding a Michelin star, with dark, polished decor that wouldn't feel out of place in a serious city dining room. The kitchen builds its reputation around large-format cuts grilled on a Big Green Egg, Porterhouse from Austria, Tomahawk from the States. A multi-course tasting menu runs alongside, so you can either keep it carnivorous and simple or let the chef complicate things beautifully with caviar.

  33. Rank 30. Firedoor

    Modern Australian American Steakhouse

Every morning the menu is written from scratch based on what came in and how the fire is burning, because Firedoor runs on Australian hardwoods alone, no gas, no electricity. Lennox Hastie's Surry Hills restaurant is a serious, sit-down affair where the open kitchen keeps the work visible and the point is restraint, not theatre. It sits at number eleven on the World's Best Steak Restaurants list, which tells you something about the aged ribeye.

  34. Rank 30. Gage & Tollner

    Steakhouse

The kitchen draws on the legacy of Edna Lewis, who ran it in the late eighties, so fried chicken and crab cakes share the menu with dry-aged prime beef. Dessert gets taken seriously, which a baked Alaska deserves. It has a spot on the World's Best Steak Restaurants list.

It runs all day, with a charcoal-heavy menu that keeps its eye on local ingredients and a signature rib-eye cooked directly on the coals. The courtyard fills up the moment Tallinn thaws. 39. Rank 30. Kali

    Steakhouse

Red curtains separate the bar from the dining room at this Michelin-starred Hollywood steakhouse on Melrose, and the lipstick carpet does the rest of the atmosphere's heavy lifting. Kevin Meehan reimagined Kali as an old-school steakhouse, so Creekstone Farms beef anchors the menu while beef tartare and crème brûlée handle the opening and closing arguments. The loaded potato, baked then fried to order, is not a thing to skip.

  40. Caesar salad made tableside, prime rib carved from a rolling trolley: Daniel Boulud's French steakhouse in the Flatiron plays its classic moves with full confidence. Leather-paneled bar, walnut floors, soaring ceilings, and servers who materialize exactly when needed. The dry-aged beef comes off an oak wood grill, sauces are French, the Bordeaux list is long, and the expense accounts are ready. Ranked 34th on the World's Best Steak Restaurants list.

  41. Rank 30. Margaret

    Modern Australian Steakhouse

Neil Perry's wood-fired grill restaurant in Double Bay sits at number two on the World's Best Steak Restaurants list, which is about as specific an endorsement as the universe offers. The open kitchen keeps the focus on dry-aged beef and whatever came off a boat that morning, and the room follows the same logic: nothing is there to impress you, which is exactly why it does. Australian producers run the whole show, pasture to coast.

  43. Rank 30. The Butcher's Son

    Modern Steakhouse

The Butcher's Son sits inside the De Koninck brewery, sharing a building with a bakery, a chocolatier, and the butcher's shop where the chef once worked, which tells you something about how seriously he takes his sourcing. This is a Michelin-starred restaurant where red meat is the heart of it, though the kitchen drifts cheerfully into surf-and-turf territory. The industrial-loft room makes it feel looser than the cooking actually is.

The room where the Four Seasons once held court still has that same pull, now under Major Food Group, with tableside presentations arriving like small theatrical productions. The Grill is a fine dining steakhouse running an all-American menu of classics, the kind of place where the suits at the next table never glance at the prices. 45. Rank 48. arkhé

    Australian Steakhouse

The open hearth in the middle of the room isn't décor; it's the kitchen's organizing principle, and everything on the menu follows that logic. This is a fire-led modern Australian restaurant in Norwood where wood smoke finds its way into vegetables and seafood as readily as into the dry-aged beef and Wagyu the place is known for. Jake Kellie, who came up at Burnt Ends, runs the hearth with an ease that keeps it from feeling like a stunt. Ranked 16th on the World's Best Steak Restaurants list.

    Basque Steakhouse

The Txuletón, a Basque-style ribeye from mature dairy cows, grilled over open charcoal with salt, heat, and not much else, is the organizing principle of this Basque-inspired chophouse in River North. The kitchen takes its cues from the asador tradition, applying that discipline to seriously sourced beef, carefully aged. Spanish reds anchor the wine list. Esquire named it among the best new restaurants in America, and it lands at number 15 on the World's Best Steak Restaurants list.

The dining room at this steakhouse inside Park MGM keeps going longer than you expect, opening into smaller rooms hung with vintage art in a way that feels more Belle Époque supper club than casino corridor. 50. Rank 48. Cote

    Steakhouse Korean

The dry-aged beef is displayed behind glass like jewelry, which tells you exactly where you are: a Korean steakhouse inside the Venetian that takes itself seriously without apologizing for it. The Butcher's Feast is the move, a family-style spread of kimchi stew and egg soufflé before the real business, premium wagyu and prime cuts cooked tableside by a service team that clearly rehearsed.

  51. The red leather booths here supposedly inspired scenes in Casino, which tells you most of what you need to know about the vibe. This is an old-school steakhouse off the Strip, the kind that served Sinatra and the Rat Pack and has never felt the need to apologize for it. Thick porterhouse, a baked potato the size of a small child, lobster tail drowning in butter. Time moves differently in wood-paneled rooms like this.

Rachel Yang, a James Beard nominee, and her partner built a menu where Pacific Northwest ingredients meet continental technique and a full sweep of Asian flavors. 54. Rank 48. Maple & Ash

    Steakhouse

A wood-fired hearth anchors this Gold Coast steakhouse, casting the kind of light that makes everyone look like they have somewhere more important to be later. Maple & Ash leans hard into the party-steakhouse genre, with deep leather couches, clubby music, and a photo booth tucked somewhere in the multilevel room. Dry-aged cuts come in generous portions, and the seafood menu holds its own. The bar is a Top 10 U.S. Nominee at the Spirited Awards.

  55. Rank 48. Miller & Lux

    Steakhouse

Tyler Florence's steakhouse sits waterfront in the shadow of Chase Center, which sounds like a pre-game stop but is decidedly not. The marble-and-leather room leans into quiet glamour, the kind of place you'd actually dress for. Dry-aged steaks are seared to a deep mahogany, oysters come from a saltwater estuary in the kitchen, and tableside Caesar service arrives without irony. The World's 101 Best Steak Restaurants lists it at number twenty-five.

  56. Rank 48. Nami Modern Korean Steakhouse

    Modern Korean Steakhouse

Edward Lee's modern Korean steakhouse in Butchertown gives you a choice: sit at a regular table and work through kimbap, bibimbap, and Korean barbecue, or claim a grill table and cook your own meat while the kitchen handles the rest. Weekend brunch adds a dim-sum-style option to the mix. The taiyaki, fish-shaped and filled with chocolate pecan pie and yuja cream, lands somewhere between Seoul and the South, which is more or less Lee's whole thesis.

  57. Rank 48. Ness

    Steakhouse

There's no sign on the corner concrete building in Núñez, which is either a statement or a test. Inside, a curtain parts onto an industrial loft where the kitchen and dining room share the same open air, and the chef cooks almost everything, starters through dessert, over fire. Portions run large and plates can be split, which suits the informal, sharing-everything mood. It holds a spot on Latin America's 50 Best list.

  58. Rank 48. Porteño

    Argentine Steakhouse

The open grill is the room's focal point, its smoke threading through exposed brick and vintage clutter to announce that this is an Argentine asado restaurant, not a steakhouse cosplaying as one. Surry Hills regulars fill the long tables for dry-aged beef cooked over fire with patience rather than theatre, and a wine list that runs Buenos Aires and Barossa in easy company. It placed 36th on the World's Best Steak Restaurants list.

  59. Rank 48. Pull

    American Steakhouse

The anchor tenant of a converted 19th-century grain elevator in Tallinn's Rotermann district, Pull is a meat-forward grill restaurant where exposed stone walls and concrete pillars do most of the decorating. Dinner leans hard into charcoal-grilled Estonian cuts, with a "Dirty Steak" that has apparently earned its name. At lunch, almost everyone orders the dish of the day, which tells you something about the pricing.

  60. Rank 48. Rockpool Bar & Grill

    Australian Steakhouse

The Art Deco banking hall on Hunter Street sets the stage: marble columns, dark timber, and a warm golden light that makes a Wednesday feel like an occasion. This is a steakhouse, and the beef programme is the point, with dry-aged cuts cooked over a wood and charcoal grill. The wine list is one of the more serious in the country. Ranked 38th on the World's Best Steak Restaurants list, which seems about right for a room this sure of itself.

  61. A wagyu-focused fine dining room in South Yarra where the menu is essentially a graduate seminar on breed, marbling, and provenance. Australian and Japanese A5 cuts are aged in-house and cooked over a hibachi grill, served simply enough that the beef does the arguing. The room is warm and understated, the sommelier knows when to stop talking, and the service hits that rare register of polished without stiff. Ranked 29th on the World's Best Steak Restaurants list.

  62. Rank 48. The Grill at The International

    Australian Steakhouse

Harbour views through floor-to-ceiling glass, leather banquettes, and Australian art on the walls set the tone at this upscale steak restaurant inside Sydney's International Hotel. The kitchen dry-ages Wagyu and pasture-raised beef in-house, then cooks over wood and charcoal with the confidence of people who don't need to explain themselves. It landed at number 33 on the World's Best Steak Restaurants list, which tracks.

  65. Rank 48. Tributo

    Peruvian Steakhouse

Volcanic stone walls, a wood-and-charcoal parrilla burning at the center, and dry-aged Vaca Vieja from the Ecuadorian Andes: this is what a Peruvian-inflected steakhouse looks like when the kitchen has an actual point of view. The chef builds everything around fire and local origin, and the charcuterie alone could anchor an argument. Ranked on Latin America's 50 Best and the World's Best Steak Restaurants lists, Tributo earns both without seeming to try.

  66. Rank 69. 20 Chapel

    Modern Australian Steakhouse

An in-house dry-ageing room in an old industrial space in Marrickville sets the tone for what this open-fire steakhouse is about: Australian beef handled with patience, then finished over live flame with more discipline than drama. The room keeps the building's bones exposed, the service keeps the formality in its pocket, and the whole place carries the quiet confidence of somewhere that doesn't need to explain itself. It landed at number 59 on the World's Best Steak Restaurants list.

  67. Vintage Vegas glamour gets a quiet update at this steakhouse inside the Circa Resort, where the chef behind Scotch 80 Prime brings a recognizable hand to the Downtown corridor. The menu runs classic prime cuts but keeps slipping in detours: lobster and shrimp potstickers, short rib with harissa, tater tots finished with poutine gravy. The crowd skews loyal, the kind who followed the chef here from his last room and haven't opened the menu in months.

  68. Tobacco-brown Chesterfield sofas, exposed brick, and a jazz soundtrack that never quite lets you hear your neighbor all set the mood at this River North steakhouse. Wet-aged cuts are broiled with care, and the raw bar holds its own alongside them. The room is dark and loud by design, which mostly works in everyone's favor. The Michelin Guide has it listed, and on a Friday night you'll understand why the reservations go fast.

  71. Rank 69. Hawksmoor

    British Steakhouse

The British steakhouse import near Gramercy that made New York carnivores feel slightly underdressed. The room leans into a warm, vintage-century-club atmosphere, and the menu runs from serious cuts to the kind of British comfort food that sneaks up on you. The bar program is no afterthought, landing a regional Spirited Award and a James Beard semifinalist nod for beverages. A New York Times Critic's Pick, and reliably easier to love than the places that take themselves more seriously.

  72. Rank 69. Johnny's Cafe

    Steakhouse

The lobby full of old menus and stockyard memorabilia tells you exactly where you are before you've ordered a drink. Johnny's is an old-school steakhouse in south Omaha's Union Stockyards neighborhood, the kind of place that has a cowboy-themed bar and a house salad dressing people ask about. The family has been running it forever, and it picked up a James Beard America's Classics award for the Midwest in 2026.

Keens is an old-school Manhattan steakhouse in Midtown, all dark wood and white tablecloths, and the mutton chop alone has landed on the New York Times list of the city's defining dishes. The porterhouse is USDA Prime, dry-aged in-house, and broiled without apology. It sits at number 68 on the World's Best Steak Restaurants list.

  74. A stone farmhouse on the Causse de Limogne, where two former sommeliers came home from New Zealand and learned to butcher from the proprietress's father. The result is a meat-forward restaurant that runs nose to tail on local animals from the surrounding departments, smoked, grilled, simmered, or pressed into terrine. On Sundays the old bread oven fires up for a leg of lamb. The wine list runs to 200 labels, organic and biodynamic among them, and she knows every one.

  76. Rank 69. Marble

    Steakhouse

A pilot who couldn't find a steak he liked decided to make his own, and the name comes from two places: the marbling on the beef and the marble prep counters the owners made sure to carry into the dining room. What started as a wooden roadside stall on Prince Turki Road grew into a proper steakhouse, and it placed twelfth on MENA's 50 Best Restaurants list. The oak-fired prime rib and the stacked Marble burger are what most tables are there for.

  77. Rank 69. Marbled & Fin

    Steakhouse

The architectural bar, deep honey-toned woods, and jacket-clad staff set the scene before you've even looked at the menu: this is a steakhouse and raw bar doing midcentury-modern decadence, and it commits fully. Seafood towers, caviar service, Australian wagyu, and martinis large enough to require a lifeguard. The room practically dares you to order the old fashioned and stop thinking about the bill. Wine Enthusiast named it a top new restaurant in 2025.

  78. Rank 69. Marcel

    French Steakhouse

Low lighting, red leather banquettes, and a name borrowed from a French boxer set the tone at this Westside steakhouse. Ford Fry built Marcel as a speakeasy-style throwback where the menu leans into dry-aged ribeyes and côte de boeuf alongside French-accented sides that nobody at the table will let you skip. The price tag is real, but so is the fun, which is a rarer combination than it sounds.

  79. Rank 69. Mooo....

    Steakhouse

A steakhouse a short walk from the State House, which tells you a lot about who's having lunch here. Mooo.... keeps a classic chophouse feel but updates it with a menu that ranges from standard prime cuts to Japanese A5 Wagyu, depending on how the negotiations went. The room is warm and polished, the service professional without being stiff, and the beef does most of the talking it needs to.

  80. Rank 69. Onglet

    Steakhouse

By day it's a working butcher shop. Come evening, the cold store door swings open and you're inside a tasting menu restaurant dressed up in nostalgic butchery decor, which is either a concept or an experience depending on your appetite for theatre. The open kitchen turns out precise, inventive cooking that takes the raw material seriously, the way you'd hope a place that literally sells the stuff in the morning would.

  81. This is a Jean-Georges steakhouse at the Bellagio, and it looks more like a jeweler's showroom than a place to eat a cow, with velvet, crystal chandeliers, and a jewel-tone palette. Tables face the fountains, so the water show has a better seat than most people you know. The menu pairs Japanese and American beef with steakhouse classics, and the room fills with expense accounts and decanters of big red.

  83. Rank 69. Shell House

A beautifully restored heritage building in the CBD sets the stage: high ceilings, original detailing, and a terrace that opens toward the skyline. Shell House is a contemporary steakhouse where the kitchen dry-ages Australian beef before it meets an open fire grill, with the wider menu showing the same restraint. It landed at number 85 on the World's Best Steak Restaurants list, which should tell you roughly what the room expects of you, dress-wise.

  88. Rank 87. Gallaghers

    Steakhouse

The dry-aging locker runs along the front window so you see the USDA Prime slabs before you even open the door, which is a very Gallaghers way of setting expectations. This old-school Midtown steakhouse has been around forever, and the walls of jockey photos and the rolling dessert cart are not ironic. Hickory-grilled steaks, creamed spinach, a bar that hums, and a menu that still winks at Prohibition. Ranked among the World's Best Steak Restaurants.

  89. Rank 87. Harlo Steakhouse & Bar

    Italian Steakhouse

Harlo is an upscale steakhouse in Summerlin, set up like an old Vegas lounge with chandeliers, indoor trees, and booths plush enough to lose a fork in. The caviar comes mix-and-match with malt vinegar fries and latkes, and the wagyu tomahawk gets carved at your table, price tag included. It's a place to wear the good jacket, though happy hour martinis with charred olives cost $11 for those watching.

  91. Rank 87. Maple & Ash

    Steakhouse

  92. Scotch 80 Prime is the steakhouse at Palms, where the wagyu comes from specific farms across Japan and the chef knows which. It's pricier than a pizza night but gentler than the Strip's steakhouses, and happy hour knocks 30 percent off select steaks and garlicky ibérico lumpia. You can perch at the bar for beef sold by the ounce, or go all in on A5 striploin and see how much marbling a human can reasonably absorb.

  93. Rank 87. The Ranch

    Steakhouse

The popovers arrive with housemade tomato jam before you've even settled in, which tells you a lot about how this Anaheim steakhouse operates. Saddle-and-spur decor sets the mood at this meat-forward room, though produce from the restaurant's own farm keeps things from feeling purely carnivorous. The prime rib and scalloped potatoes are built for sharing, as is everything else, unless you've skipped lunch with conviction.

  94. The charcoal grill has been burning here since the eighties, one of the first of its kind in Hong Kong, and it remains the whole point. This is a hotel steakhouse inside the Regent, with harbour views over Victoria and a beef programme that dry-ages cuts from Japan, Australia, the US, and beyond. The salad bar is a fixture regulars treat as seriously as the meat. It ranked 80th on the World's Best Steak Restaurants list.

  95. Rank 100. Beast & Cleaver

    Whole-Animal American Steakhouse

By day, Beast & Cleaver is a Ballard butcher shop where you can walk out with chops and links for the home stove. After hours it turns into a whole-animal steakhouse under the alter ego "The Peasant," running a tasting menu, which is the sort of double life usually reserved for superheroes. Steaks, house sausages, and even the salads draw a meat-minded crowd, and the chef was a James Beard Emerging Chef semifinalist.

    Steakhouse Italian

A wood-burning oven does the heavy lifting at this intimate Italian steakhouse tucked into Nancy Silverton's Melrose compound. The kitchen leans hard into live fire and big cuts, with cooking that's boldly seasoned and more seasonal than you'd expect from a place where meat is basically the religion. Best Place Score

The Best Place Score rates the area around a point, not any one place. The places are 60% of it: the best of what's within reach, weighed by distance. The setting is the other 40%: how life goes in that country (how people rate their own lives, how long and how well they live, how safe they are) and what it's like right there (the air, and the weather). If the score looks low, we probably haven't found enough critics out here yet.
