An emerald-green bar anchors this clubby Roman-inspired dining room in downtown Bethesda, the kind of place where an Aperol spritz arrives before you've settled into your seat. The chef behind D.C.'s Red Hen runs the kitchen, and pasta is the main event, though the snacky bar bites and a lunchtime cheeseburger that has no business being this good keep things interesting. Upscale Italian without the starch.

Rank 5. AP Pizza Shop
Pizza
The counter-service offshoot of All-Purpose's DC locations, AP Pizza Shop runs a leaner menu than its siblings but holds two things they don't: pizza by the slice and a chicken-parm sandwich that reportedly requires planning around. The deck-oven pies use long-fermented dough, which makes the crust worth eating on its own. Order the feta ranch with chili oil for dipping and pretend it was your idea.

Rank 7. Xiquet
Spanish
A wood-fired hearth and a smoker do the heavy lifting in this fine dining room on the third floor of a Glover Park townhouse, where chef Danny Lledó builds a tasting menu around the food of Valencia. Rice cooked over the open fire is the gravitational center of the meal. The room holds only a handful of tables, and after dinner guests move to the lounge for coffee. It holds a Michelin star and AAA Five Diamonds.

Japanese
The rooftop draws Adams Morgan brunch-seekers, but the real reason to come is Masako Morishita's Japanese comfort food, which won her a 2024 James Beard Award for Emerging Chef. This neighborhood restaurant has long been a sushi standby, though the menu has drifted into more interesting territory: edamame dumplings with Parmesan, fried mochi in dashi, a shrimp-katsu burger that commits fully to its own premise. The rotating specials and occasional Saturday prix fixe breakfasts keep regulars checking back.

American
A four-course prix-fixe in Columbia Heights where cacio e pepe shows up as a Bartlett-pear salad and no one bats an eye. Chef Yuan Tang's menu roams freely from steakhouse classics to Southeast Asian detours, and the mix-and-match format means the bar can match wine to whatever path you picked. It holds a Michelin star, and the room skews lively enough that "fine dining" undersells how relaxed the whole thing feels.

The former Heller's Bakery space now runs all day as a cafe, from morning lattes and egg sandwiches on potato rolls through a pastrami Reuben at lunch and on to dinner plates that get genuinely ambitious: fried halloumi with farro, chicken Milanese with romesco, ravioli with mushrooms and hazelnuts. Flour tortillas wrapped tight in foil are the move at this fast-casual breakfast taco counter in Mt. Pleasant, which grew out of a pop-up and earned a Michelin Bib Gourmand doing it. A moss wall and a foie gras "negroni" topped with Campari gelée tell you pretty quickly that this is not a low-key bistro. A few steps below street level on MacArthur Boulevard, this intimate counter seats you facing the sunken kitchen where the team runs an eight-course Wagyu omakase. Pressed-tin ceiling, exposed brick, wine bottles lining the shelves above your head: this Georgetown neo-bistro looks exactly like the French place you've been trying to find in this city. New American
The tiramisu ice cream is apparently non-negotiable, and regulars seem to have made their peace with that. This New American neighborhood restaurant in quiet Chevy Chase keeps things unfussy: ricotta dumplings, beef tartare, trout cooked the way trout should be. The room fills fast, the bar fills faster, and nobody seems to mind eating standing up. A set menu exists for the decisionally exhausted.

Rank 29. Anju
Korean
The name says it all: "anju" means Korean food made to go with a drink, and this gastropub on 18th Street takes that premise seriously, with soju, makgeolli, and beer running alongside a menu of fried snacks, rich stews, and banchan. Brick walls, wood floors, and a bit of funky art make it feel like a neighborhood spot that happens to be packed every night. The chef is a James Beard nominee, and the cooking has a mom's-kitchen warmth that earns that comparison without being sentimental.

Sharp-suited servers and laser-focused chefs work in close quarters while a high-energy playlist keeps the room from tipping into reverence. Plant-based Peruvian tasting menus in Shaw sounds like a premise that requires a disclaimer, yet Mita holds a Michelin star and a James Beard nomination for Best New Restaurant. The chef's team pulls from across Latin America, so the flavors run from Andean to coastal without apology. Midnight-blue walls, gold accents, and a Persian rug that has no business being this plush set the mood at Apéro, a French restaurant on P Street where champagne and caviar are essentially the whole thesis. A working pasta station behind glass sets the tone at this lively Italian trattoria in Arlington, where a whimsical Sophia Loren portrait watches over the room. The tlayuda, a large tortilla charred and spread with herby black beans, is a good reason to learn where Ennalls Avenue is. This casual Silver Spring taco shop draws on Oaxacan tradition, so expect moles with real depth alongside the alambres, where grilled meat and melted cheese arrive ready to be scooped into tortillas. A Caribbean restaurant named for the Port of Spain district that inspired it, St. James turns shared plates into a convivial argument for Trinidadian cooking. The space is modern and industrial with splashes of color, and the drinks lean hard on rum. Rank 94. New Heights
New American
The coffee-colored carpet and quiet room in Woodley Park don't exactly scream destination dinner, but this New American restaurant has been around forever and cooks with a confidence that doesn't need to announce itself. The menu roams widely, from fried oysters with pickled cauliflower to rack of lamb with salsa verde, and pulls it off without breaking a sweat. A grown-up room for people who'd rather eat well than be seen doing it.

The arepa arrives wrapped like a little gift, seared masa around a fried egg, tomato, cotija, and avocado. This all-day Latin American spot on Florida Avenue runs from morning coffee through dinner without any of the fuss, and the price point reflects that. Upstairs, an intimate room with original details fills with regulars chasing the pork empanadas and masa gnocchi with braised beef.

Rank 100. The Red Hen
Italian
Reclaimed timber, exposed brick, and beamed ceilings make this Bloomingdale spot feel like a farmhouse that somehow ended up in DC. It's a rustic Italian restaurant where the pastas do the heavy lifting, particularly a rigatoni with fennel sausage ragù that regulars order without looking up. The three-sided bar is your best friend if you didn't plan ahead. The Michelin Guide has awarded it a Bib Gourmand.
