  71. A Michelin-starred Italian restaurant in a traditional farmhouse surrounded by actual working fields might sound like a fever dream, but here we are in ancient Asuka. The chef's family grows most of what lands on your plate, so when they say farm-to-table they mean the farm out the window.   76. A one-Michelin-star French tasting menu tucked inside a converted sake brewery in the Nara countryside, which is exactly as cool as it sounds. The chef leans hard into local Yamato beef, Nara pickles, and even the brewery's own rice, which ends up in the risotto.
