  6. Rank 909. Petit Grill Basque

    Traditional Basque

Wooden shelves stacked with decorative plates, original stenciled walls, and ceiling fans that look like they've been there forever set the tone at this old-school Basque bistro in Saint-Jean-de-Luz. The menu runs in French and Basque, which tells you where you are, and the food follows: tripe, cod, Biscay-style tuna, beef tartare, steak in pepper sauce. Hearty, unfussy, and exactly as regional as it sounds.

  18. The room was a grocery shop in a former life, and the intimate scale stuck. This bistro on rue Bonaparte runs a short, seasonal menu where most plates are built for two to share, the music skews trendy, and the wine list leans into orange with something like conviction. The team behind Les Agitateurs in Nice does the cooking, which swings easily between classic French and something more restless. A Michelin Selected restaurant.

    Australian

A wood-fired oven does most of the heavy lifting at this small modern restaurant named for a month in the French Revolutionary calendar, which sets expectations accordingly. The Australian chef runs the floor and the kitchen solo, baking his own bread and churning his own ice cream between searing fish with a light hand. Opening hours shift, so booking ahead is less a suggestion than a requirement.

  36. A contemporary bistro near Tarbes's Arsenal quarter, run by a chef with serious fine-dining pedigree and a former nurse who retrained as sommelier, which tells you something about the couple's commitment to doing things properly. The cooking is modern and confident, the wine list leans on independent growers, and the weekday lunch menu changes weekly at a price that makes regulars suspicious something's been miscounted.

  38. Handmade ceramic tableware sets the tone at this creative bistro in Cognac, where the chef's market-driven cooking leans hard on local produce. Stints at Lucas Carton and Jadis are visible in the technical confidence, but the room has an industrial, arty looseness that keeps it from feeling starched. Foie gras with miso-pickled aubergine gives you a sense of where things are headed: familiar ideas pushed just far enough to be interesting.

  40. A concrete bar runs the length of the open kitchen in this lively Avignon bistro, where street art shares wall space with whatever the chef is plating that night. The cooking lands somewhere between comfort food and something more curious, with spices, berries, and dried fruit nudging familiar dishes sideways. Devilled eggs get red curry; pita bread gets braised beef. The motto is "come, eat, drink," which tells you exactly what kind of evening this will be.

  53. Rank 909. Racines

    Italian

Tucked into the covered passage des Panoramas, this Italian osteria in bistro clothing runs on a carte blanche menu and whatever the chef felt like that morning. The cooking is Sardinian at heart, pulling from Italian produce with the confidence of someone who doesn't need to explain himself. Vitello tonnato, polpette, ricotta ravioli: straightforward dishes that taste like someone actually cared. The wine cellar side of things is not decorative.

  62. Near the Saône, this modern bistro runs on market logic: the menu shifts with whatever looks good that week, and the kitchen keeps things bright and a little unexpected. Lunch is a short, affordable affair; evenings stretch into tasting menus. The room goes for distressed industrial with an open kitchen, which at this point is practically a genre. The sommelière, though, is the real differentiator, and worth leaning on.

A small seasonal restaurant right on the port of Portivy, where the fish comes from short supply chains and the menu changes with whatever the coast provides. The kitchen keeps things simple and direct, ikejime-style bream, spider crab, local vegetables, without fuss. Six rooms upstairs look out to sea, which is a civilized arrangement when lunch runs long. Selected by the Michelin Guide.

    Modern French

Centuries-old beams and raw concrete share walls here, which tells you something about what Amandine Chaignot is up to in this sleepy Perche village. The restaurant, named for sage, leans hard into herbs, with sorrel, nettle, verbena, and rosemary threading through a plant-forward menu built on produce from neighboring farms. It operates as both a bistro and a fine dining room, so the village gets a local and you get something considerably more considered.

The half Peking duck, ordered two days ahead and served in two courses, tells you everything about this relaxed Cantonese neo-bistro in the 11th. The chef spent years at Shang Palace before opening something looser and louder, with aproned servers who actually talk to you and a deliberately short menu that resists the urge to cover every province. The room is convivial in a way that feels earned rather than designed.

The score comes from the awards it's won, weighted by who gave them: a Michelin star outweighs a listicle. When you sort by what's nearby, distance changes the order, never the score.

      Stay Score

Four fifths of the score is the awards it's won, weighted by who gave them: a Michelin Key outweighs a listicle. The last fifth is where it is: the ranked places to eat and things to do around it, and how safe the country is. When you sort by what's nearby, distance from you changes the order, never the score.

          Best Place Score

The Best Place Score rates the area around a point, not any one place. The places are 60% of it: the best of what's within reach, weighed by distance. The setting is the other 40%: how life goes in that country (how people rate their own lives, how long and how well they live, how safe they are) and what it's like right there (the air, and the weather). If the score looks low, we probably haven't found enough critics out here yet.
