The best places to drink and stay in Turkey, according to the experts: the Forbes Travel Guide, the Michelin Guide, and The 50 have all weighed in, and their honors are what rank this list. Four Seasons Hotel Istanbul at Sultanahmet comes out on top, and the good stuff runs deepest in Istanbul and Bodrum.
More Less
Four Seasons Hotel Istanbul at the Bosphorus and The Peninsula Istanbul hold the next two places. The Michelin Guide shows up on more of this list than any other guide, with the Forbes Travel Guide next.

The arched windows and yellow-ochre façade give nothing away, but this Forbes Five Star hotel spent its earlier life as a political prison, which is either a great story to tell at dinner or a mild haunting, depending on your outlook. It sits steps from the Hagia Sophia and the Blue Mosque, and the rooms are all hand-woven carpets and Murano glass. A small, quietly opulent base for the old city.

The pool sits so close to the Bosphorus that Europe and Asia share the horizon at once. This Forbes Five Star hotel occupies a 19th-century Ottoman mansion on Çırağan Caddesi, and the setup is as theatrical as it sounds: ferries pass, minarets recede, and the Asian shore is right there. A hammam anchors the spa, rooms run toward the palatial, and the ferry quay is a short walk.

A clocktower built by the Ottoman sultan's own watchmaker still keeps time outside this Bosphorus-front hotel, which sets the tone. Turkish architect Zeynep Fadillioglu stitched together three historic buildings, including a 1930s cruise terminal whose turquoise tiles reappear throughout, into something that feels less like a renovation than a conversation across centuries. The 177 rooms face the water, and the Forbes Four Star property earns its place on one of the world's great waterfronts.

A restored Ottoman sultan's palace on the Bosphorus, which means you sleep with the strait outside your window and the European and Asian shorelines framing the view. The Çırağan Palace Kempinski holds a Forbes Five Star and is the only Istanbul hotel you can arrive at by private boat or helicopter, a fact the wedding crowd has not overlooked. The gardens run nearly a mile along the waterfront, which is a long walk to feel underdressed.

A Forbes Five Star hotel that sits right on the Bosphorus, with its own piers so guests can arrive or depart by boat, which is either practical or a little theatrical depending on your mood. The 100 rooms feel more boutique than grand chain, with Ottoman detailing and terraces that look out over the strait. The pine grove and waterfront pool make it easy to forget Istanbul is just outside the gates.

Every room looks toward the Bosphorus, which sets the tone for this Forbes Five Star hotel inside the Zorlu Center tower. The interiors, by Hirsch Bedner Associates, layer hand-blown chandeliers, large-scale sculpture, and commissioned art drawn from Istanbul's visual culture into something that reads less like a lobby and more like a well-curated argument for the city. The surrounding complex has cinemas and a major performing arts venue, so there's rarely a reason to wander far.

Art deco bones meet a curated collection of Ottoman and contemporary art throughout this luxury hotel in Nişantaşı, Istanbul's high-fashion quarter. The library alone, stocked with volumes on design and Ottoman history, suggests a place that takes its interiors seriously. Commissioned works and pieces from the Demsa Collection hang in corridors and guest rooms alike. It holds a Forbes Four Star rating, and the butler service runs the way the brand's New York heritage always promised it would.

The first twelve floors of Suzer Plaza belong to this Ritz-Carlton, a luxury hotel perched above the Bosphorus in the thick of the city. The renovation a few years back gave the interiors a contemporary frame with Ottoman accents, so the rooms feel rooted somewhere specific rather than nowhere in particular. Forbes Four Star. The views do a lot of the talking, and the staff, apparently, lets them.

Olive and pine trees slope down to Paradise Bay on all sides, which makes it easy to forget you're at a Forbes Five Star resort on the Aegean and not simply someone's very large, very lucky hillside estate. The property runs to nearly 150 acres, with two private beaches, four pools, a full spa, and eleven food and drink options, so the question of whether to leave rarely comes up. Villas and apartments with private pools suit families well.

The bones here are 1920s Milanese art deco, and the Park Hyatt has leaned into them rather than buried them in a renovation. This Forbes Four Star hotel sits in Nişantaşı, Istanbul's most gilded neighborhood, where the patisseries charge accordingly and the boutiques don't post prices. What was once a private apartment block for the city's elite is now sleek and minimal inside the ornate shell, which is either a tension or a conversation, depending on your taste in lobbies.

Perched on the European shore of the Bosphorus in Beşiktaş, this luxury hotel earns its views the old-fashioned way, by putting the strait front and center from nearly every angle. The Shangri-La name carries a certain amount of pressure, and the team leans into it with Asian-inflected hospitality layered over Turkish warmth. A Forbes Four Star property, it draws the kind of guests who want a spa day and a water view without choosing between them.

A chandelier modeled on flying carpet folklore hangs in the double-height lobby of this Forbes Four Star waterfront hotel in Istanbul's Ataköy district, with floor-to-ceiling windows framing the Marmara Sea behind it. A former monastery carved into Cappadocia's volcanic rock, Argos is a boutique hotel where the caves are the rooms and the lunar landscape out the window is entirely earnest. Stone pathways wind between terraces and a wine cellar, some rooms have fireplaces, and a few have private pools. The hot-air balloons drifting past at dawn are not staged for your benefit, which is a rare thing to be able to say.

Eight dining venues, none of them buffet-style, serve food included in the rate, while the pool situation splits between a private lagoon off certain rooms and a full waterpark on the grounds. A hotel on the Golden Horn built inside what was once one of Istanbul's great shipyards, with exposed stone walls and arched windows left deliberately bare in the rooms so you remember what the building has been through. Intricate latticework and ornate geometric patterns sit alongside 4K televisions and underfloor heating, which is more or less the design brief for this luxury hotel in the heart of Sultanahmet. The Azerbaijani ownership has leaned into its own cultural identity rather than chasing boutique minimalism, so expect carved woodwork and arabesques at every turn. A former Franciscan convent in Istanbul's quiet Tom Tom quarter, now a 20-suite boutique hotel where the nuns' high ceilings and solid wood floors share space with handcrafted rugs and contemporary paintings. The bespoke furniture and warm natural tones make it feel less like a hotel and more like borrowing a very well-decorated friend's apartment, assuming your friend has a panoramic rooftop restaurant named after a 20th-century nun.

The rooftop looks out over the whole of Istanbul, which is a good way to start a stay. Witt is an all-suite hotel in Cihangir, designed by Autoban, the local studio whose work you keep bumping into around town. Their rooms here run to wood, leather, and space-age lines, with each suite fitted out with a proper kitchen and living room. It reads less like a hotel than a very good apartment you somehow got to keep.

Each freestanding suite and pavilion at this Aman resort on the Bodrum Peninsula comes with its own private marble pool, which rather sets the tone. Built into a hillside above the Aegean and arranged along quiet footpaths like a clifftop village, it pairs hand-carved stone and Ottoman-inflected architecture with rain showers and espresso machines. The three-story Library Tower is a nice touch for a place that makes leaving feel like a personal failing. Michelin Key holder.

Eleven rooms spread across a cluster of low-profile modernist houses, adults-only, and quieter than Bodrum has any right to be. Birdcage 33 is a boutique hotel where the design mixes modern furniture with traditional Turkish craft and the pool deck does most of the socializing. Every room at this Yalikavak resort looks straight out at the Aegean, which is the kind of architectural decision that renders most other decisions irrelevant. Allium is a full-scale luxury resort on the Bodrum Peninsula, with an infinity pool, a pier for sea swimming, and a spa complex. The interiors lean into warm wood and handmade textiles, so the whole thing feels grounded rather than glossy. It holds a Michelin Key.

Perched just above the noise of Taksim Square, with Gezi Park on one side and the Bosphorus shimmering on the other, this boutique hotel leans residential rather than minimalist-cool, leaning on wood, leather, and stone to keep things warm. Soundproofed windows and Aromatherapy Associates in the bath suggest someone thought carefully about comfort. An in-house restaurant, bar, and spa mean you can ignore Istanbul for longer than you probably should.

The Sirkeci building once housed a 19th-century tax-collection company backed by the Rothschilds, which is either a footnote or a selling point depending on your feelings about the Gilded Age. It's now a 34-room boutique hotel, and the conversion keeps Ottoman-era architecture largely intact while minimalist interiors stay tactfully quiet around it. Downstairs, a brasserie focuses on Turkish wines and raki, and an open-fire Anatolian restaurant works out of the same address.

Tucked between Taksim Square and the Bosphorus, this boutique-leaning MGallery hotel wears its name honestly: public spaces are stacked with contemporary art and furniture that swings from Art Nouveau to now without apologizing for it. Six restored Ottoman stone houses joined into a 25-room boutique hotel in Alaçatı, a coastal Aegean town that European sailboat owners have kept quietly to themselves for years. The rough stonework and arched fireplaces stay intact in the Classic rooms; Premium rooms trade local character for blonde wood and contemporary art. Stained glass, decorative mouldings, and golden bedroom details pull the design cues from the Hagia Sophia and Grand Bazaar practically next door, so the Ottoman-inflected surroundings carry into the room where you sleep. The wooden revolving door and copper dome belong to a century-old bank building that now operates as a boutique hotel in Sirkeci, steps from the old city's layered chaos. A row of 19th-century townhouses in Beşiktaş hides 142 rooms where the W chain's usual tower ambitions get redirected inward: baroque reception decor, boudoir-heavy guest rooms, and suites with chandelier-lit living rooms or circular beds. A boutique hotel in Yalikavak that runs only May through October, which somehow makes arriving feel like a small coup. The four reasons in the name are serenity, design, quality, and attitude, a branding exercise that would be easy to roll your eyes at if the place weren't so genuinely low-key about it. Bodrum Castle sits close enough that you can squint at it from the pool while an Aegean breeze does the heavy lifting. This resort runs three restaurants at once: a shoreside club with live DJs, an upper-floor Italian room pulling from Piedmont and Tuscany, and a Pan-Asian bar above the cove. A Turkish hammam handles the rest. Loft Sea View suites come with marble floors, wide balconies, and one room where glass doors slide open to a plant-filled atrium.

A genuine abandoned village in the volcanic landscape of Cappadocia, restored into a boutique hotel where the ancient stonework does most of the decorating. Rough-hewn cave rooms have stone archways, subterranean cool, and, in the better ones, terraces with views of the famous rock chimneys. A few smaller rooms run dark and short on outdoor space, so springing for a suite is less an indulgence than a point of logic.

Literally carved into the volcanic tufa of Uçhisar, this small cave hotel sits high enough to put Cappadocia's fairy chimneys and rock-cut valleys at your feet. Rooms run from compact to arched suites with hammams and underfloor heating, which keeps the ancient geology from turning on you overnight. Hot air balloon rides over the landscape at dawn are easy to arrange, assuming you can leave the view from bed.

Rooms carved from volcanic tufa, kilim rugs on the floor, a working fireplace, and a pool positioned to catch the hot-air balloons drifting past at sunrise: Aza is a cave hotel that doesn't apologize for leaning into the drama. The family behind it has been building and running places like this in Göreme forever, and this is their most polished effort. Guests also have access to Seten, the family's fine-dining Anatolian restaurant next door.

Perched at the tip of its own mini-peninsula, this boutique hotel is built like a small village into a forested hillside, so the Aegean fills every view and the sprawl of the Bodrum Peninsula stays politely invisible. Modernist-leaning villas sit tucked among preserved trees, with a spa, a private beach, and four restaurants on site. It's open May through October, which for some guests becomes a calendar consideration rather than a footnote.

Twelve suites organized around the zodiac, each hung with original art the owners collected over decades at auctions and private studios, from Turkish masters to a Botero. This boutique hotel on Torba Bay reads less like a hotel than the vacation home of someone with excellent taste and unlimited air miles. A private jetty, a silent pool, and a Turkish breakfast under a canopy make the art-gallery atmosphere feel surprisingly livable.

Guests arrive to Ottoman sherbets and Turkish delight, which sets the tone for this family-run cave hotel in Göreme operating under halal tourism principles. The suites are carved from the same volcanic rock that shapes the whole valley, some with private rock-cut pools or a Turkish bath. Breakfast is laid with homemade dishes while fairy chimneys fill the window. Most mornings, hot-air balloons drift past before you've finished your tea.

Carved into a terraced hillside above Göreme, this 35-room cave hotel is built from hefty limestone blocks rather than simply hollowed out, so the arches and columns feel deliberately made rather than accidentally ancient. Rooms range from doubles to suites roomy enough for copper soaking tubs. Balconies look out over the balloon-dotted Cappadocian sky, which is either romantic or a lot, depending on your disposition. The on-site restaurant serves Anatolian food; staff can arrange the obligatory aerial tour.

Some rooms here are carved into limestone that was old before anyone thought to put a door on it, others are stone-walled structures perched high enough to look out over the surreal Cappadocian landscape. It's a hotel where the setting does most of the talking, though Nana Cappadocia, the on-site restaurant, keeps up with contemporary Turkish cooking and local wine. The concierge can arrange a hot air balloon over the valley, which is either a cliché or a revelation depending on the morning.

A cave hotel in Göreme where the village streets run straight through the property rather than stopping at the gate, which tells you everything about the philosophy here. Fifty rooms spread across stone houses and actual cave spaces, no two the same shape. Stone homes and cave rooms carved into Cappadocia's soft volcanic rock make up this boutique hotel in quiet Ortahisar, just off a square dominated by a sedimentary formation riddled with ancient hideaways. Turkish marble bathrooms, a spa, and a lobby bar keep things comfortable between hot air balloon rides.

Twenty-nine rooms carved into the soft stone cliffs of Ürgüp, in Göreme National Park, where the neighborhood was already considered prime real estate back when its residents were collecting taxes for the emperor. This cave hotel keeps the interiors sparse on purpose, an elegant wooden bed and an occasional patterned rug doing the work that the warm carved-stone walls mostly handle on their own. Some rooms add deep stone bathtubs or fireplaces; the higher tiers get heated pools and private balconies with views of the rock chimneys at golden hour.

A seven-room boutique hotel tucked into Alaçatı's cobblestone lanes, built inside a 19th-century stone house that the Kestelli family has been quietly obsessing over for generations. The family's own farm supplies the kitchen, which is the kind of detail that sounds like marketing until you taste breakfast.

Tafoni means the bird nests that crown Cappadocia's volcanic rock spires, which tells you both the inspiration and the ambition of this cave hotel in the village of Ortahisar. Suites are carved into the rock and original stone dwellings, each named for a different nest and none quite matching another: iron window grates uncovered during excavation, fireplaces, blue painted doors in some, marble Jacuzzis and custom chandeliers in others. The terraces and art gallery suggest this place skews palatial over cozy.

Biblos sits on a wilder stretch of the Çeşme Peninsula, five minutes outside Alaçati proper, facing a protected nature reserve rather than the town beach, which is actually the better trade.
