  1. Moon gates and hand-embroidered silk wallpaper set the tone for this formal Huaiyang restaurant inside The Londoner Macao, where one of China's four great culinary traditions gets its due. Zhou Xiaoyan, known as the Godfather of Huaiyang Cuisine, leads a kitchen that holds two Michelin stars and a Forbes Five Star. The cooking prizes restraint and seasonal precision, which sounds modest until you learn a single fish dish requires removing 164 bones without disturbing the shape.

  8. Rank 8. Fù Huì Huá

    Huaiyang Sushi

Eight seats, eight seatings a week, and a reservation list that moves like continental drift. Fù Huì Huá is an omakase counter on 24th Street where a father-son team serves a tasting menu rooted in Huaiyang cuisine, shaped by time in Shanghai and Japan. The format reads kaiseki; the food is entirely Chinese. The San Francisco Chronicle ranked it among the top ten restaurants in the Bay Area.

  40. Mongolian-style hotpot is the whole point here, specifically the shuan yang rou, a slow-braised mutton pot that pulls diners down to the basement of The Royal Garden for something you won't find on most Hong Kong menus. It's a Beijing and Huaiyang cuisine restaurant, brisk and functional in the way places built around a central ritual tend to be. Beijing dumplings and meaty pancakes fill out the table for anyone who needs more reasons.

Eat Score

The score comes from the awards it's won, weighted by who gave them: a Michelin star outweighs a listicle. When you sort by what's nearby, distance changes the order, never the score.

      Stay Score

Four fifths of the score is the awards it's won, weighted by who gave them: a Michelin Key outweighs a listicle. The last fifth is where it is: the ranked places to eat and things to do around it, and how safe the country is. When you sort by what's nearby, distance from you changes the order, never the score.

          Best Place Score

The Best Place Score rates the area around a point, not any one place. The places are 60% of it: the best of what's within reach, weighed by distance. The setting is the other 40%: how life goes in that country (how people rate their own lives, how long and how well they live, how safe they are) and what it's like right there (the air, and the weather). If the score looks low, we probably haven't found enough critics out here yet.
