Rank 1. Emeril's
Cajun & Creole
EJ Lagasse took over his father's legendary Warehouse District fine-dining room at 22, after stints at Frantzén and Core by Clare Smyth, and now holds two Michelin stars. The tasting menu threads Creole classics through a contemporary lens, BBQ shrimp tarts and deep-flavored gumbo alongside smoked salmon cheesecake. Floor-to-ceiling glass frames the kitchen like a stage, and the service team plays the room with genuine warmth. Emeril's, basically reinvented.

The turquoise Garden District mansion has been turning out Modern New Orleans Creole since Ella Brennan and a young Emeril Lagasse were essentially inventing the genre together. Fine dining in the grand sense, white tablecloths and all, though the room skews festive rather than stiff. Meg Bickford runs the kitchen now, keeping the cooking by turns classicist and a little bodacious. Wine Enthusiast put the cellar in its Hall of Fame, and the weekday lunch martinis go for a quarter.

Cajun & Creole
The dining room walls, red and hung with African-American art, tell you this is a place with a history before you've touched the menu. A Creole fine dining institution in New Orleans, it holds a James Beard America's Classics Award and a Michelin Bib Gourmand, and the cooking, gumbo, fried chicken, peach cobbler, earns every regulars' loyalty. The matriarchs still walk each table personally, which at a certain point stops being service and starts being something else.

Vietnamese Cajun & Creole
This is a Viet-Cajun crawfish house on Bellaire Boulevard, where you wear a bib and gloves big enough to look like a bit. The crawfish come boiled with lemongrass and ginger, and the turkey necks arrive pre-spiced. The room works like a sports bar that lost the plot, with the Astros on every TV and a Darth Vader helmet in the corner nobody will explain. It's casual, loud, and messy, and the check stays reasonable.

The chef calls it "Frenchie-tropical," which is a better description than anything you could invent: a casual bistro in the 9th where Creole cooking from Martinique meets the Parisian set-menu format. The table by the window on St. Charles is the one to request, and once you're in it you'll understand why this place has been around forever. The restaurant is named for chef Michelle Carpenter's grandmother, whose fried chicken recipe anchors the menu at this contemporary Cajun and Creole spot in Oak Cliff. Dark-meat, deeply seasoned, and handed down through generations, it's the kind of dish that makes everything else feel like a warm-up act. The raw bar is the main event here, a New Orleans-leaning oyster and seafood spot in Roma Norte that hums with the same energy as its Polanco and Guadalajara siblings. Gumbo as dark as a Louisiana bayou at midnight, only built around smoked brisket and wilted greens, is a reasonable summary of what the kitchen is doing here. This modern Cajun-Creole restaurant in Louisville's Schnitzelburg neighborhood lands chef Lawrence Weeks on the New York Times Restaurant List and a James Beard Emerging Chef semifinalist nod, both in the same year. Glittery chandeliers and wax candles do a lot of heavy lifting in this handsome fine dining room on Tchoupitoulas, where exposed brick and white tablecloths split the difference between grand and comfortable. A sandwich shop on Haight doing exactly one thing from New Orleans: the muffuletta, served in a wedge like a slice of savory pie, toasted or cold. The meat version layers prosciutto, mortadella, soppressata, and provolone under a spicy olive spread; mushrooms and scallions handle the vegetarian side. White tablecloths in an Uptown cottage near a bend in the river, which tells you something about how New Orleans operates. Brigtsen's is a Cajun-Creole restaurant where the chef spent years under Paul Prudhomme absorbing the bayou side of Louisiana cooking, then brought it back to the city and blended the two traditions into something that belongs entirely to this place. The room is unhurried, the menu is not trying to be fashionable, and that combination tends to fill tables with regulars.

This Cajun and Creole restaurant runs on the late Paul Prudhomme's influence, and the kitchen leans into Maryland pantry staples to keep the gumbo and jambalaya from feeling like a costume. Rank 68. Cajun Kitchen
Cajun & Creole
Crawfish cooked wok-style, the way you'd handle crab or lobster in Chinese cuisine, so every crevice gets a proper coating of spice and oil. This Cajun-Asian boil spot in southwest Houston does mudbugs in flavors like Thai Basil or a butter-garlic-citrus house special, and the heat scale runs up to something called Cray Cray, which should tell you all you need to know about who's ordering it.

Rank 68. Debris Po-Boys & Drinks
Cajun & Creole Sandwich Shop
The bread comes from Leidenheimer, the legendary New Orleans bakery, which tells you most of what you need to know about this po'boy shop's priorities. Gulf seafood and roasted meats get stuffed into fresh baguettes with all the classic condiments, and a Thanksgiving Everyday option, turkey with cornbread stuffing and cranberry sauce, quietly steals the room. A bananas foster old-fashioned is on the cocktail list, because of course it is.

Rank 68. Double Bayou Crawfish Farm & Boil House
Cajun & Creole
The crawfish come from the fields you can see from your table, which is either the most logical supply chain imaginable or a mild existential moment for the mudbugs. This BYOB boil house sits about an hour outside Houston, and the lines form by six, so early arrival is less a suggestion than a survival skill. Tours and boat excursions through the rice and crawfish fields are available if you call ahead. Order by the pound or go straight for the full feast.

Rank 68. Rosedale
Cajun & Creole
Susan Spicer's Mid City neighborhood restaurant is the kind of place where the shrimp creole does all the talking. A casual Cajun and Creole spot, Rosedale keeps the cooking steeped in New Orleans tradition without any of the ceremony that follows a celebrated chef around town. The room is low-key, the food is direct, and the whole operation runs like it was built for the people on the block, not the people writing about it.

Cajun & Creole
The plate-lunch spot that landed on the New York Times Restaurant List sits on Perkins Road, dishing out smothered chicken and meatless vegetable sides that taste like somebody's grandmother meant every bite. The chef learned to cook in Mississippi and has been running this kitchen for decades, splitting the difference, geographically and spiritually, between New Orleans and Lafayette. Go hungry and plan to eat with a spoon.

Rank 98. The Elysian Bar
Cajun & Creole Cocktail Bar
The Elysian Bar is a cocktail bar in the Marigny, tucked inside a converted church-turned-hotel, where the atrium bar is so relentlessly yellow it feels like a secret study belonging to a pipe-smoking baron. Cajun and Creole small plates, like focaccia with honey butter, keep company with a Hibiscus 75. It's elegant without being stiff, and it made Food & Wine's list of top hotel bars in the country.
