  1. A cheese trolley stocked with Piedmont and French selections is an unusual flex for a restaurant on the Apulian waterfront, but Casa Sgarra has always done things its own way. This Michelin-starred fine dining room is a family operation, with brothers running the floor and the kitchen, and the service has the warm, unhurried ease that comes from people who mean it. The cooking roots itself in Apulian tradition, then wanders wherever the chef's curiosity leads.

  2. Rank 1. Primo Restaurant

    Modern Apulian

A young Puglian chef with a Michelin star and a very strong point of view runs this intimate contemporary restaurant in Lecce's historic center. The kitchen leans deep into the region, then takes a sharp left turn, reinterpreting Apulian tradition through a personal, visually striking lens. Tasting menus run seven or eight courses; an à la carte exists for anyone who rebels against the format. The room is the kind of quiet that lets the food do the talking.

  3. Apulian trattoria that grew out of a family butcher shop and never really left those roots behind. Meat still anchors the menu, and the kitchen garden supplies vegetables that show up in a long procession of antipasti and fresh pasta. The wine cellar runs to over 300 labels, which is serious for a town this size. A Michelin Bib Gourmand, and there's a small B&B next door if the meal stretches, as it tends to.

  5. Rank 4. Coquus

    Apulian

Eight tables under a vaulted brick ceiling in what used to be a bishop's palace: this small Apulian restaurant in Lucera's historic centre earns a Michelin Bib Gourmand for cooking that takes the region's land-and-sea larder seriously without taking itself too seriously. The chef's riff on a prawn cocktail, striped in alternating cocktail sauce and squid-ink cream, signals exactly how the evening goes.

  10. Handmade orecchiette and stuffed pucce ordered at the counter, with a buzzer to tell you when to collect, is the whole operating philosophy here. This casual street food spot in Lecce is part of a broader Apulian project, taking in food trucks, masserie, and a kitchen run by a young local cook alongside a Moroccan pizza chef. It ranked first on 50 Top Italy's street food list, and the room hums with the kind of easy energy that tends to follow good cheap food.

  11. Rank 11. Botteghe Antiche

    Apulian Trattoria

Tiramisu arrives in a baking dish, served tableside the way it would be at home, and that tells you most of what you need to know about Botteghe Antiche. It's a country trattoria in Putignano, all checkered tablecloths and hanging pots, built around Apulian cooking that leans hard into Sunday-lunch memory: eggplant parmigiana, fresh orecchiette, slow ragu. The room smells accordingly. It landed on 50 Top Italy's list of modern trattorias and bistros.

  13. Rank 12. Cielo

    Modern Apulian

Perched at the highest point of Ostuni's whitewashed old town, this contemporary Apulian restaurant sits inside a restored historic residence, with a barrel-vaulted dining room and a small citrus courtyard for summer evenings. The kitchen takes regional ingredients and reworks them with a light, modern hand. The terrace catches the sunset in a way that feels almost unfairly cinematic. Dinner runs formal; lunch shifts to something easier.

  18. Rank 12. Jaco

    Apulian

A beige-toned dining room in the well-heeled Fort Jaco neighborhood, where the kitchen takes its cues from Puglia: bright, sun-driven flavors with a light touch. This is a contemporary Italian restaurant with a sensual, slightly dressed-up feel. The bar is worth arriving early for, partly for cocktails and partly to plot a run through the adjoining deli before you sit down.

  22. An old mill just outside Modena doing its best impression of Puglia, and pulling it off. This trattoria-style restaurant leans hard on the heel of Italy: stuffed peppers, fava purée with chicory, eggplant parmigiana, and meats cooked over live embers. Sitting in egg-pasta country and ignoring most of it takes some nerve. Desserts arrive in a basket, a pile of small sweets with dried fruit and chocolate, which is a fine way to end anything.

The score comes from the awards it's won, weighted by who gave them: a Michelin star outweighs a listicle. When you sort by what's nearby, distance changes the order, never the score.

      Stay Score

Four fifths of the score is the awards it's won, weighted by who gave them: a Michelin Key outweighs a listicle. The last fifth is where it is: the ranked places to eat and things to do around it, and how safe the country is. When you sort by what's nearby, distance from you changes the order, never the score.

          Best Place Score

The Best Place Score rates the area around a point, not any one place. The places are 60% of it: the best of what's within reach, weighed by distance. The setting is the other 40%: how life goes in that country (how people rate their own lives, how long and how well they live, how safe they are) and what it's like right there (the air, and the weather). If the score looks low, we probably haven't found enough critics out here yet.
