Peruvian cooking has always been a quiet argument that fusion was never a modern invention, and this Mesa restaurant makes that case across a menu that moves from Japanese-inflected ceviche to Chinese-Peruvian lomo saltado to chicken stew finished with Parmesan. The chef behind it has opened more Peruvian spots around Phoenix than anyone, and calls this one his last. The spit-roasted chicken, served with fried yuca, tends to do the convincing.

Texas Barbecue
The dry-rubbed brisket here comes out with a coffee-dark bark and a pink smoke ring earned over post oak and hickory, the way Texas pitmasters do it. Wayne's is a casual BBQ shack in Superior that regulars mourned loudly when a 2021 wildfire took out most of the kitchen. It came back in 2023, candied pork belly and St. Louis ribs and all. Bring your own patience and a decent appetite; the sauces are housemade, but the brisket doesn't need them.

Wood-fired pizza shop in Denver's LoHi neighborhood, where the charred, garlicky pies lean into their New Haven roots without being precious about it. The menu runs white and red, and a frozen Negroni is always on offer, because of course it is. The team also runs a Mexican spot around the corner, and that same willingness to ignore what a dish is "supposed" to be carries over here.
