  1. Rank 301. abysse

    French

The dining room is kept dark, like something submerged, and the menu follows the same logic: a Michelin-starred French contemporary restaurant built around the idea that mountain streams become rivers that feed the sea. The chef's obsession with seafood started in Marseilles and landed here, in Ebisu, as a kind of philosophical project, Japanese ingredients folded into French technique with the seasons doing most of the arguing.

  4. The chef grows their own vegetables and closes every meal with a financier, a pastry that doubles as a joke about the restaurant's name and the alchemist's obsession with gold. This Michelin-starred contemporary French spot in Shirokanedai takes a quiet but firm position: ingredients don't add up, they multiply. Sea and mountain produce arrive at temperatures calibrated to dissolve on contact, which sounds like a promise and more or less is.

  9. Rank 301. Chi-Fu

    Chinese

The name blends "Chinois-Fumé" and "Chinese Futurism," which tells you exactly what kind of evening you're in for. This Michelin-starred Osaka restaurant applies French technique to Chinese cooking, then pairs the results with wine, a combination that sounds like a dare and lands like a thesis. The menu runs enigmatic and poetic, amuse-bouches appear on tea-utensil shelves, and Shaoxing wine perfumes the sauces. Dinner here reads less like a meal than a well-argued position paper.

  15. A gate, a garden path, and a waiting area set the mood before you've seen a menu. This is a chakaiseki restaurant in Osaka's Chuo-ku, where the meal unfolds like a slow argument for restraint, from Chinese medicinal drinks paired with classical poetry to a wharf soup built on dashi from vegetable scraps. The Osaka touches feel deliberate, not decorative. One Michelin star, and a chef who pours the tea himself.

  17. Rank 301. Gion Kida

    Japanese

A Michelin-starred kaiseki restaurant in the heart of Gion, where the menu is essentially a calendar written in food. The chef works from the idea that a year has 72 micro-seasons, each just a few weeks long, and the kitchen takes that seriously enough that what arrives at the table shifts with the week, not the month. Old Kyoto neighborhood, quiet room, the kind of meal where the ingredients do the talking.

  18. Rank 301. Gion Owatari

    Japanese

White rice cooked over an old clay hearth sets the rhythm at this one-Michelin-star counter kappo in the heart of Gion. The chef runs the room like a genial host, keeping the banter going while portioning out lobster, crab, matsutake, and blowfish with a generosity that feels almost pointed. A second serving of rice topped with raw egg is the kind of quiet flourish that regulars quietly look forward to.

  22. Rank 301. itsuka

    Chinese

A prix fixe Chinese restaurant on the second floor in Minami-Aoyama, with a Michelin star, where the menu reads like a culinary autobiography: Sichuan discipline on one page, Taiwanese restraint on the other, Japanese ingredients threading through both. The house-made doubanjiang and mala sauce arrive on the appetiser platter, bold and delicate trading turns. The name roughly means "to cherish," and the kitchen takes that rather literally.

  28. A fourth-floor Chinese restaurant in Sonezakishinchi where dinner ends with the whole table gathered over Chinese tea, which is either the most civilized ritual in Osaka or a very gentle hint that you've been there long enough. The name nods to a monks' assembly hall, and the kitchen leans into that communal spirit, sending out regional appetizers and dishes with quiet twists, a Michelin star keeping the room quietly confident.

  29. A father and two sons run this Michelin-starred tempura counter in Kyobashi, frying each piece in cold-pressed sesame oil at whichever of two oil temperatures suits it best. The kitchen tracks the seasons closely, so what lands in front of you shifts with what's actually good that week. The batter stays thin enough that the ingredient does the talking, which is the whole point of tempura and harder than it looks.

  31. Rank 301. L'ARGENT

    French

A one-Michelin-star French restaurant in Kasumigaseki where the menu reads like a biography, Shizuoka-grown ingredients meeting time spent in Paris and Copenhagen. The chef pulls Kakegawa tea from their hometown into a foie gras torchon, and mushrooms from local producers go through fermentation before becoming soup. It's a precise, modern kitchen that earns its Nordic references without making a point of them.

  34. Rank 301. L'ÉTERRE

    French

A one-Michelin-star French restaurant on the second floor of a Kagurazaka townhouse, L'ÉTERRE takes its name from a blend of "eternity" and "earth," which is either poetic or a solid riddle depending on your French. The kitchen builds contemporary French menus around Japanese seafood and seasonal produce, with proteins cooked over charcoal, firewood, or straw, old techniques treated as a living practice rather than a costume.

    The awards

  35. A one-Michelin-star French restaurant in Hiranomachi where the menu is essentially rewritten each time the chef returns from the morning market. The cooking treats French technique as a lens for Japanese terroir rather than a set of recipes to repeat, so sauces and preparations shift with whatever the season is doing that week. The room draws a quietly serious crowd who don't need a printed menu to trust the kitchen.

  36. Rank 301. la bûche

    French

The chef is at the market every morning, listening to farmers before deciding what goes on the plate. This one-Michelin-star French prix fixe restaurant sits in the rural mountain village of Ohara, and the wood fire burning at the open counter runs on timber from forest thinning, which is either very poetic or very on-brand, probably both. 52. The noren out front says it plainly: tempura first, soba to finish. This Nihombashi tempura restaurant follows that order with conviction, pulling its seafood from Shizuoka's Suruga Bay and layering in seasonal vegetables sent directly from farmers. 53. Concrete walls and a glass-enclosed kitchen give this kappo restaurant the feel of a modern tearoom, which turns out to suit it perfectly. The chef and sommelier both came up through Japanese restaurants in Paris, and that double fluency shows: seafood, citrus, and rice arrive from the chef's native Tokushima, while fermented Awa bancha tea quietly threads through the menu. He came up running pasta at a celebrated Naples restaurant before opening this one-star spot on his own terms. The name comes from Nahuatl, the Aztec word for a farming system that replenishes the soil, which tells you something about how seriously the chef takes the philosophy here. This is a contemporary Mexican restaurant with a Michelin star, built around corn, cacao, and chilies sourced from Mexico and cooked over a wood-fired grill, with Japanese ingredients folded in where the traditions allow them.

Invitation only, which should tell you something about the crowd before you've even tried to book. Matsukawa is a kaiseki restaurant in Akasaka where the chef personally selects ingredients at the market each morning, then builds a ten-course menu around what he found. The kitchen is open, the plates look deceptively simple, and the flavors are not. Getting a table requires knowing someone who already has one.

  87. The champagne list is organized by the town Sézanne borrows its name from, which tells you something about the level of thought going on here. This is a fine dining room on the seventh floor of the Four Seasons, designed by André Fu, with Tokyo's skyline sliding in after dark. The kitchen is glass-walled and fully on display. The team holds a spot on the World's 50 Best Restaurants, running a contemporary French tasting menu that folds in Japanese ingredients without making a fuss about it.

  88. Rank 390. Yakoboku

    Cocktail Bar

A former storehouse on a pre-war street in Kumamoto, stripped back to almost nothing, where the dramatically lit counter and the bartender behind it are the entire point. Yakoboku is a serious cocktail bar, trained up through Tokyo, Singapore, and Lamp Bar in Nara, and it shows in the quiet confidence of the room. Asia's 50 Best Bars has it at number 25, which lands about right for a place this deliberately unhurried.

  89. This is a cocktail bar on the ninth floor in Azabujuban, where the balcony frames Tokyo Tower like a postcard someone paid extra for. Inside, a disco ball spins over a Godzilla statue in a furry eye mask, and the menu arrives as a manga comic. The drinks are inventive, with sake and shochu in play, and hot dogs show up on the food side. It made Asia's 50 Best Bars at #70, so dress for a party that has opinions.

  90. Ten counter seats, a 20-piece omakase, and a reservation that requires more patience than most people have. This is the Ginza sushi counter that Barack Obama called a revelation and that convinced Joël Robuchon that sushi belongs in the same conversation as any classical art form. Each piece arrives individually prepared, whatever the sea offered that morning. The room is small and quiet enough that you can hear yourself think, which is probably the point.

  92. Rank 392. Honkogetsu

    Japanese

The counter on the ground floor is cut from a single plank of hinoki wood that has been around for six centuries, which sets the tone before a single dish arrives. Honkogetsu is a kaiseki restaurant on the cobblestone lane leading to Hozenji Yokocho, housed in a sukiya tea-room building with hanging scrolls, ikebana arrangements, and tatami rooms above. Many small, exquisite courses in succession; nothing is rushed.

The score comes from the awards it's won, weighted by who gave them: a Michelin star outweighs a listicle. When you sort by what's nearby, distance changes the order, never the score.

      Stay Score

Four fifths of the score is the awards it's won, weighted by who gave them: a Michelin Key outweighs a listicle. The last fifth is where it is: the ranked places to eat and things to do around it, and how safe the country is. When you sort by what's nearby, distance from you changes the order, never the score.

          Best Place Score

The Best Place Score rates the area around a point, not any one place. The places are 60% of it: the best of what's within reach, weighed by distance. The setting is the other 40%: how life goes in that country (how people rate their own lives, how long and how well they live, how safe they are) and what it's like right there (the air, and the weather). If the score looks low, we probably haven't found enough critics out here yet.
