Chef Ronny Emborg sends out a long procession of tasting courses that manage to feel delicate and rich at the same time, a trick harder than it looks. The counter itself is unusually generous for this format, so the immersive part doesn't mean elbowing a stranger all night.

Chef Thomas Allan's food is seasonal and lightly composed, familiar enough to read fast and precise enough to hold your attention.
