Rank 121. Guido
Seafood
From the outside it reads as a chic beach club gazing out at the Adriatic; step inside and the elegance turns hushed and a little unexpected. Guido is a Michelin-starred seafood restaurant, now in its third generation, built around the flavors of the upper Adriatic coast. The cooking looks simple at first, then quietly reveals the kind of technique that doesn't announce itself. An old-school institution with nothing to prove and nowhere to rush.

Piedmontese
The agnolotti here are closed with a pinch, a gesture Lidia Alciati made famous and her sons still honor at this one-Michelin-star Piedmontese restaurant inside the Fontanafredda estate. The dining room runs to old-money elegance, a modern fireplace doing its best to keep things from feeling like a museum. The kitchen cooks close to the land, with a cellar that takes the local wine list very seriously indeed.

Modern Mediterranean
The dining room at this Michelin-starred restaurant inside the Baglioni Resort looks out over a manicured garden and pool, which sets the tone pretty well. The chef, Claudio Sadler, brings a modern Mediterranean fine dining menu that moves between classical and contemporary without making a fuss about it. A vegetarian tasting menu runs alongside the main offering. Resort guests in linen fill most tables, but the food is doing its own thing regardless.

Sitting on the Sila plateau, a forested highland that the ancient Greeks had opinions about, Hyle is a modern Calabrian restaurant that traces a single region's landscape from coastline to mountain peak. The chef holds a Michelin star and sources vegetables, walnuts, and aromatic herbs directly from local growers. Tasting menus named in Calabrian dialect move through seven or eleven courses, depending on how deep into the hills you want to go.

A portico farmhouse in the Vigevano countryside that looks more like a private villa than a restaurant, hung with antique furniture and paintings by local artists. The chef and his wife have been running this Michelin-starred kitchen together for ages, he in back cooking classical Lombard cuisine, she keeping the dining room warm. Duck and goose anchor the menu, which is exactly right for this corner of the Po plain.

Mediterranean
A Liberty-style frescoed ceiling inside a converted 19th-century musical café sets the scene for this Michelin-starred fine dining restaurant on Bologna's grandest boulevard. The kitchen runs Mediterranean-leaning tasting menus in three lengths, and if the main room feels too grand, the 14th-century icehouse downstairs has a glass floor looking straight into the wine cellar, which is exactly as theatrical as it sounds.

Sicilian
The dining rooms sit inside Villa Palagonia, an 18th-century palazzo that Goethe once wrote about, which sets a certain tone before the food arrives. This is a one-Michelin-star restaurant serving contemporary Sicilian cooking across four tasting menus and a long à la carte, with a chef's table for four and a wine cellar running to around 1,300 labels. The ambition is serious but the roots stay local, with Sicilian meat and fish doing most of the talking.

A Michelin-starred restaurant set inside a historic villa outside Bologna, where the chef builds a menu around the distance between Campania and Emilia-Romagna, two regions that don't naturally talk to each other but have plenty to say. The wine list runs deep, with multiple vintages of Sassicaia and Tignanello for anyone who wants a reason to linger. The garden is there if you need somewhere to quietly reconsider your life choices after the rabbit stew.

The building once cured fish in salt; now a Michelin-starred kitchen uses it to cure its guests of boring meals. Il Bavaglino is a creative contemporary restaurant in Terrasini where the chef builds tasting menus around Sicilian tradition without being enslaved to it, moving comfortably between the sea and land. The local purple prawns, served raw with caviar, olives, and a lemon-ginger coulis, give you a fair sense of the register.

A Michelin-starred Alpine restaurant in the ski village of Madesimo, Il Cantinone stays rooted in the mountains while quietly letting the wider world in. The kitchen works with buckwheat, venison, trout, and truffles, then folds in ideas picked up on travels abroad, a combination that earns the place its star without feeling like it's trying to. Stonework walls in one room, clean modern lines in the next, and a kitchen with a notable fondness for seafood despite being firmly landlocked in the Brianza hills. Piedmontese
A Michelin-starred trattoria in a sleepy Piedmont village where the same family has been running the dining room and the stoves for generations. White truffle arrives in autumn, a monumental fritto misto turns up in winter by reservation only, and the cellar is the kind that makes a sommelier go quiet. Italian
A fine dining room tucked into a quiet vicolo near Piazza Navona, where three brothers from the Marche have been cooking and running the floor together long enough that the rhythms show. The kitchen leans into Italian classical roots while pushing them somewhere more personal, with tasting menus that shift by season. The wine cellar runs to thousands of labels, with verticals going back decades, and a Coravin setup so the good stuff is pourable by the glass. One Michelin star.

Murano glass chandeliers hang over hand-painted ceiling beams in a fifteenth-century palazzo that has been feeding Verona well for decades. Il Desco is a Michelin-starred fine dining room where the leather armchairs are deep enough to commit to, and the sommelier steers a wine list serious enough to warrant the attention. Tasting menus or a focused à la carte keep things orderly; either way, the room does a lot of the convincing before the food arrives.

The wood paneling runs floor to ceiling, and the room holds only a handful of tables, which gives dinner at this one-Michelin-star restaurant inside the Grand Hotel Fasano a quietly conspiratorial feel. Chef Maurizio Bufi pulls from his Puglian roots and the Lake Garda larder, then keeps going, ranging across Italy and beyond as the seasons allow. Tasting menus anchor the format, with a vegetarian path alongside.

Tuscan
The approach alone does some work: narrow lanes between dry-stone walls, fields stretching across the Baracchi estate, and then a Michelin-starred restaurant that pours wine grown just outside the window. It's an upscale Tuscan dining room with a firm sense of place, built around Chianina beef, pici, and herbs from the surrounding land. The olive oil on the table was likely pressed a few hundred metres away, which is either charming or makes you feel slightly underdressed.

Perched inside the Petra Segreta resort above a garden with coastal views, this fine dining room earns its Michelin star with modern Mediterranean cooking built largely from what the hotel farm grows, raises, and ages on-site. A young chef from Campania cooking in a medieval Chianti courtyard is either a recipe for confusion or something genuinely interesting, and here it lands as the latter. A terrace carved into the cliffside of a former monastery, looking out over the Amalfi Coast to the sea, is the setting for this Michelin-starred dining room at Monastero Santa Rosa. Seafood Mediterranean
Tucked above a working shipyard with marina views, Il Tino is a Michelin-starred seafood restaurant where aromatic herbs do quietly serious work. The chef has an almost botanical command of them, including varieties most cooks have never heard of, and they show up threading through creative Mediterranean plates. You can order à la carte or choose between two tasting menus, one charting signature dishes by vintage, the other running his newest ideas.

A dirt road through the Sienese hills leads to this small fine-dining room inside a hotel, where a single blind tasting menu is the only offer and the kitchen doesn't take requests. The chef behind the two-Michelin-starred Krèsios runs this outpost, bringing the same surprise-course format south into Tuscany. Expect land and sea to trade places unexpectedly, with vegetables doing more heavy lifting than you'd anticipate. Il Visibilio holds a Michelin star.

The open kitchen runs the length of the room, and the minimalist design makes no apologies for it. This is a Michelin-starred tasting menu restaurant in a small Ligurian coastal town, where nearly everything on the plate comes from small local producers. Three menus move through different registers of the region: coast to inland hills, deep sea, or purely vegetable. The cooking frames Liguria as a landscape worth exploring rather than a backdrop.

The bread trolley arrives before anything else, five or six varieties wheeled to the table like a quiet overture. This is a fine dining room tucked into a hotel off Piazza della Repubblica, where the chef's years cooking in three-starred kitchens around the world show up in dishes that use heat and spice with unusual precision. This is a Michelin-starred creative restaurant in a city that takes its food very seriously. The drive in through cypresses and vineyards does a lot of the work before you've even sat down. This Michelin-starred restaurant sits inside a medieval castle at Castello Banfi, with wine-themed frescoes lining the interior and a terrace that turns the surrounding Tuscan hills into the main course. The chef brings a Pugliese sensibility to the tasting menus, with the territory and the kitchen garden doing most of the talking.

A one-Michelin-star restaurant in Sirmione where the summer terrace puts you eye-level with the lake and the castle's reflection, sky and water splitting the view in half. The chef's cooking leans creative and technically precise, French haute-cuisine instincts running under distinctly Italian produce. Inside, pale interiors keep things quietly elegant for the crowd that arrives dressed for exactly that kind of evening.

A wood-paneled stube inside the La Perla hotel, all warm timber and candlelight, sets up exactly the cozy Alpine dining room you'd expect in Corvara, and then the food goes somewhere else entirely. The chef grew up in Calabria and spent years cooking in Japan, and those two poles show up on the plate in ways that feel considered rather than restless. The kitchen leans toward vegetables. One Michelin star.

The rooftop dining room of the Eden Hotel frames a sweep from the Quirinale to St. Peter's, which is a lot to compete with, and the kitchen manages it. Chef Salvatore Bianco draws on his Campanian roots for a modern tasting menu that leans Mediterranean, bright with seasonal herbs and confident technique. A Michelin star. The sommelier navigates a deep international list with the ease of someone who has clearly done this a thousand times.

Inside a medieval castle in the Chianti hills, this Michelin-starred fine dining room earns its setting without hiding behind it. The chef draws from an organic kitchen garden, picking from as many as ten tomato varieties, and shapes that produce into creative, technically precise tasting menus built around vegetables, meat, or seafood. Lake Garda sits just outside, and the kitchen makes that count, pulling from its waters for a menu that moves between regional tradition and something more considered. La Tortuga is a small, romantic fine dining room on Gargnano's main street, with a Michelin star and a wine list that rewards the curious. Seafood
The Santa Susanna canal runs right outside the door, and on good days you eat on a wooden bridge above it, which is only appropriate given that trout, tench, pike, and freshwater crayfish are the whole point here. This one-Michelin-star country restaurant in the Lazio hills has been around forever, treating freshwater fish with the seriousness usually reserved for the sea. They send you home with wild herbs to steep.

Italian Seafood
A Michelin-starred seafood restaurant on a tiny islet in the Po Delta, reached by a farmhouse that sits in near-total silence broken only by lagoon birds. The kitchen leans classic, which here means golden-fried seafood, steamed fish salad with house-made squid-ink mayonnaise, and eel cooked over embers the way it's been done in this corner of Emilia-Romagna forever. The caramelized beignets with mandarin sauce are a quiet nod to local pastry legend.

Two centuries-old wood-paneled stuben inside a traditional mountain house set the scene for one of Friuli's quieter surprises. This is a Michelin-starred fine dining room where the chef reads the alpine pantry closely and without showing off, letting season and instinct steer the menu. The wine list is overseen by her daughter, who delivers by-the-glass picks verbally, which is either charmingly old-fashioned or a very good sign you should just ask.

A fireplace in winter, a garden terrace in summer, and a Michelin-starred kitchen threading lake fish and Lombardy tradition through a quietly modern lens year-round. The Tonola family has been feeding this corner of the province for generations, and the current setup pairs a young chef's deft hand with parents who run the room and the wine list with the ease of people who've never needed to think too hard about either.

A sibling act runs this Michelin-starred contemporary restaurant in the Veneto flatlands: one in the dining room, one in the kitchen, both clearly in charge. The tasting menus lean on regional fish, meat, and vegetables, with a shorter produce-forward menu that changes weekly. The wine list is serious enough that you should let someone talk you through it. The cooking is technically ambitious without announcing itself, which in this part of Italy feels like the right call.

Five tables in a fine dining room inside the Bellevue Hotel, two of them facing the Gran Paradiso massif, which does some heavy lifting as a backdrop. A Michelin-starred restaurant set inside a small 16th-century tower at the edge of Bagheria's historic centre, a town the Palermo aristocracy once lined with baroque villas. Dinner begins on a terrace lounge with a run of appetisers before you move inside to two elegant, contemporary floors. Contemporary Italian
A Michelin-starred creative restaurant on the Aventino, reached by climbing to the first floor of an old building where a winter-garden dining room fills with natural light and potted plants soften the good bones. The kitchen reinterprets Roman tradition through unexpected textures and pairings while keeping the flavors assertive enough to feel like Rome. Downstairs, the same team runs Mantis for something looser, but up here it's a proper occasion.

Contemporary Italian
A renovated stone farmhouse set among the Langhe vineyards, this is a Michelin-starred restaurant where the Camia family has been cooking Piedmontese cuisine for longer than most. The chef and his daughter run the kitchen, and his son works the cellar, which runs to something close to encyclopedic on local bottles. The cooking leans modern but stays rooted in the territory. A handful of rooms upstairs mean you don't have to drive anywhere after the wine.

Contemporary Italian
A Michelin-starred creative Italian restaurant in a small Pontinia town square, where the kitchen takes the Agro Pontino's local ingredients seriously enough to let them argue with Indian spices, a nod to the region's large immigrant community. The dessert course skips sweet entirely in favor of olives, basil, and artichoke. One half of the couple runs the room with warmth and a wine list she clearly knows cold; the other cooks.

Sicilian
A Michelin-starred contemporary Sicilian restaurant inside a 16th-century palazzo, almost directly across from the Cathedral, and also, yes, a shrine to Steve Jobs: photographs and memorabilia fill the frescoed rooms. The chef, Carmelo Trentacosti, takes classic recipes and tilts them, a caponata turned into a velvety sauce finished with Modica chocolate being the example everyone mentions. Ask about the balcony on your way out.

French-influenced Italian
A cheese cart that rolls up with genuine gravity sets the tone at this Michelin-starred villa on the edge of Brescia. The room is classic and a little formal, with bay windows looking onto the garden, and the cooking crosses the Alps in both directions, French technique folding into Italian tradition without much fuss about which side wins. Dress up a little; this is a proper dinner-out sort of place.
