Whole-Animal American Steakhouse
By day, Beast & Cleaver is a Ballard butcher shop where you can walk out with chops and links for the home stove. After hours it turns into a whole-animal steakhouse under the alter ego "The Peasant," running a tasting menu, which is the sort of double life usually reserved for superheroes. Steaks, house sausages, and even the salads draw a meat-minded crowd, and the chef was a James Beard Emerging Chef semifinalist.

Steakhouse
Vintage Vegas glamour gets a quiet update at this steakhouse inside the Circa Resort, where the chef behind Scotch 80 Prime brings a recognizable hand to the Downtown corridor. The menu runs classic prime cuts but keeps slipping in detours: lobster and shrimp potstickers, short rib with harissa, tater tots finished with poutine gravy. The crowd skews loyal, the kind who followed the chef here from his last room and haven't opened the menu in months.

Steakhouse
The 1889 Saloon inside is supposedly designed by the cattle baron's wife, which is exactly the kind of detail that makes this old-school Phoenix steakhouse feel like it earned its spurs. Corn-fed aged beef and prime rib anchor the menu, alongside bison meatloaf and baking soda biscuits that haven't changed much since the place opened. The Western décor leans hard into its ranching roots, and nobody seems to mind.

Modern Steakhouse
Coral Gables has a new-school steakhouse that runs on locally raised beef and Australian Wagyu, dry-aged and handled with the kind of seriousness that usually comes with a longer track record. The room keeps things understated, natural materials and soft light instead of the old dark-wood-and-excess formula. It landed at number 40 on the World's Best Steak Restaurants list, which is a statement for a place still finding its footing.

Steakhouse Italian
A wood-burning oven does the heavy lifting at this intimate Italian steakhouse tucked into Nancy Silverton's Melrose compound. The kitchen leans hard into live fire and big cuts, with cooking that's boldly seasoned and more seasonal than you'd expect from a place where meat is basically the religion. The wine list runs deep into Italy. Booking is tight, and the room fills fast with people who clearly did not come to order a salad.

RingSide is a white-tablecloth steakhouse where the onion rings arrive piping hot and the martinis arrive cold enough to pass for a legal argument. The bar is sunken and dimly lit, with little booths made for settling in, and the Blazers are usually on, losing quietly. The menu runs to three kinds of Japanese Wagyu and a wine list the size of a hymnal. It also holds AAA Three Diamonds. Dress like you're staying.

Tobacco-brown Chesterfield sofas, exposed brick, and a jazz soundtrack that never quite lets you hear your neighbor all set the mood at this River North steakhouse. Wet-aged cuts are broiled with care, and the raw bar holds its own alongside them. The room is dark and loud by design, which mostly works in everyone's favor. The Michelin Guide has it listed, and on a Friday night you'll understand why the reservations go fast.

Rare Society is a steakhouse off the Strip that skipped the cavernous Vegas format for a tight, loud, midcentury room with some Rat Pack swagger. It's close enough to spot the well-coiffed socialites and noisy enough that you won't hear their traffic complaints. The kitchen cooks over red oak and sends out a lazy Susan of wagyu, tri-tip, filet, and bone marrow, so bring a card with some headroom.

Steakhouse
Prime beef has been the main event here since the 1980s, with the kitchen turning out steaks at a consistency that keeps the regulars from ever really needing the menu. It's a classic North Jersey steakhouse, lobster and fine seafood rounding things out, plus a sushi and sashimi program that feels less like a gimmick and more like a genuine reason to stray from the beef. Just over the George Washington Bridge for Manhattan types making the case for New Jersey.

The dry-aging locker runs along the front window so you see the USDA Prime slabs before you even open the door, which is a very Gallaghers way of setting expectations. Steak 44 is a high-end steakhouse on the north side of Phoenix that somehow sidesteps the usual corporate-vault atmosphere, landing closer to a neighborhood spot where the bar fills with regulars and families stake out booths for birthdays. The menu wanders past its brief with soft-shell crab in vanilla tempura alongside the expected shrimp cocktail.

Don's Prime is a white-marble, gold-trimmed steakhouse inside Fontainebleau, where the staff in velvet tuxedos treat service like a stage production. Raw steaks are presented on a board for your approval, Old Fashioneds get mixed on a rolling cart, and dessert arrives with its own trolley. Dress like someone who expects to be looked at, since the circular bar is that kind of seat. Eater named it the best new steakhouse.

Steakhouse
A renovated meat and produce warehouse in Fulton Market, now a grand steakhouse where sweeping wood-trimmed arches and polished brass make the room feel like an occasion before the food arrives. USDA Prime beef hits a high-heat broiler and comes with a trio of sauces; Australian and Japanese Wagyu round out the beef program. The Boka Restaurant Group runs it with the kind of quiet polish that makes a large room feel effortless.

The modest exterior on a quiet West Village street gives almost nothing away, which is apparently the point. Inside, 4 Charles Prime Rib is an intimate, old-school steakhouse with deep leather booths and staff who seem to know your name by the second drink. The cash-only policy has turned away more than a few first-timers who showed up unprepared, which is arguably part of the point. This old-school Brooklyn steakhouse runs on dry-aged Porterhouse, no-nonsense servers, and wood-paneled rooms full of people who've been coming for decades. A dark wood-paneled steakhouse tucked deep inside Circus Circus, which is a bit like finding a tuxedo in a ball pit. There's a dry-aging closet, oil paintings of cows the size of garage doors, and an open kitchen where you can watch your order get chopped and grilled. Entrees arrive with pretzel bread and black bean soup, and the martinis are essentially cups of gin. Expect resort-casual and a neighbor with a story.

Cleaver is a steakhouse just off the Strip where the portraits are Napoleonic-era military figures, except the generals are Queen Latifah and Jack Black. The bar's cocktail menu is sorted by era, starting in the mid-1800s, and the bar team took a Spirited Award in 2024 for Best U.S. Restaurant Bar. Nicco's is a steakhouse inside Durango Casino Resort, about as far from the Strip as you can get without leaving the valley, and the room seems to know it. The meat and seafood sit on display near the open kitchen, the lighting is low enough to forgive anything, and the bar does a burger for nights when a full steakhouse performance feels like too much. Locals fill the booths, including the people who work the casinos for a living.

Steakhouse
Perilla is a Korean steakhouse tucked into a downtown Chicago hotel, where the staff cook the cuts on a grill at your table so you can supervise without technically lifting a finger. Wagyu and marinated short rib are the draw, but the Caesar with milk bread croutons and the Korean fried chicken keep the non-beef contingent fed. Since it's a hotel restaurant, steak and eggs start at 7 a.m. Eater lists it among Chicago's steakhouses.

A Mexican steakhouse on Sixth Avenue where the dish everyone's talking about costs twelve dollars. The Taco Richi, named a favorite by the New York Times critic, is an open-faced flour tortilla loaded with rib-eye ribbons and salsa verde pork cracklings, finished with a crust of seared cheese. The neon Googie sign out front has been promising sugar steak to Colfax drivers for longer than most Denver restaurants have existed. Bastien's is an old-school steakhouse with a sunken bar, mid-century bones, and servers who've been around long enough to know your order. The sugar steak earned a spot on Eater's list of Denver's most iconic dishes, and the dirty martini situation won a Westword award in 2023, which feels about right for a room this committed to its era.

Steakhouse
The name nods to the culinary slang for "out of stock," and supposedly the slang nods back to this building. That circular logic fits a steakhouse so committed to provenance it sources mature Spanish Vaca Vieja cattle from a New Jersey farm and reads its beef list less like a menu than a position paper. A Himalayan salt ageing room sits below the original Prohibition-era bar. The cut gets cooked on a Spanish plancha, a broiler, or Japanese binchōtan, whichever suits that particular animal.

Rank 195. Golden Ox
Steakhouse
The Golden Ox has been in the Stockyards District forever, and it carries the beef-town energy like a badge. It's an old-school steakhouse with porterhouses that require a plan, oysters Rockefeller, and creamy cocktails like the Pink Squirrel for anyone feeling retro. The team claims the Kansas City strip originated here, which Kansas City is happy to believe. The adjoining Stockyards Brewery handles nightcaps when you want the Western aesthetic to go a little longer.

Rank 195. Marble Room
Steakhouse
The room was a bank once, and it still looks like money, with soaring beaux arts ceilings, massive pillars, and ironwork that makes you straighten up just walking in. Marble Room is a prime steakhouse and raw bar doing caviar, seafood towers, and serious cuts in one of Cleveland's grandest spaces. Live music fills the room on weekends, which somehow fits the scale perfectly.

Rank 195. Steak
Steakhouse
Cocktails arrive in mini bathtubs and disco-ball goblets, which tells you everything about the vibe before you've touched your steak. This is a steakhouse with a set-price format: most meals come with salad, sauce, and a side built in, running from a house sirloin cap up to a 32-ounce tomahawk for the committed. The room is dim and deliberately sexy, free popcorn lands on the table first, and the whole thing is priced to feel like a night out rather than a special occasion.

Pan-Latin Steakhouse
Toro Toro is a Pan-Latin steakhouse inside the Downtown Four Seasons, where the meat shows up on a cart and gets finished at your table, as if the steak needed an entrance. Richard Sandoval's menu also runs a ceviche and sushi bar, so the table can split between the cow people and the fish people without a fight. Expect hotel-dining prices and a room dressed for business dinners and anniversaries.
