Rank 197. Miraflores
Peruvian
Ceviche marinated in tiger's milk with black cocoa is the kind of dish that explains why this Michelin-starred fine dining room exists. A Peruvian chef brings French technique and Andean instinct together in a sleek contemporary space with an open kitchen, turning out cooking that reads as personal rather than performed. The menu leans into texture and contrast, and the flavors land with a precision that feels considered rather than showy.

A converted farm building in the garrigue countryside outside Nîmes, named for the chef's grandmother, who apparently taught him well. This is a one-Michelin-star tasting menu restaurant where pale wood and white porcelain set the tone for cooking that pairs Mediterranean instincts with some serious technical confidence. The lunch menu is the move, and the crowd driving out from the city knows it.

The dining room sits on the first floor of the historic Dior boutique on Avenue Montaigne, which means the tableware is, of course, Dior. Yannick Alléno runs this one-Michelin-star restaurant with a menu built around haute couture references, dishes named for "New Look" and the house's signature silhouettes. It's a fine dining room where the fashion metaphor is played completely straight, and somehow that makes it work.

A mountain inn perched at the edge of a small village with the Beaufortain peaks for a backdrop, this one-star restaurant runs on surprise tasting menus built around seasonal, locally sourced produce. The chef came up through pastry, and it shows in the precision and the desserts. No narrative pretension, just refined modern cooking that happens to taste exactly like it looks. The welcome from the front of house is warm enough to make the drive up feel like a good decision.

A 16th-century mill deep in a Natura 2000 nature reserve is a commitment, and so is the drive to get there. Inside, the old mill mechanism survives alongside glass and clean contemporary lines, making the setting feel earned rather than costumed. The cooking is a Michelin-starred modern restaurant rooted firmly in the surrounding terroir, Limousin beef and Neuvic sturgeon alongside local pork, with a wine list that leans natural and biodynamic.

A wood-and-white dining room in a small Atlantic coast town, where two chefs who came up through Le Mirazur run a carte blanche menu of modern French cooking. Artichokes, prepared in layered contrasts, are something of a house signature. The rest of the menu plays textures and surf-and-turf pairings with a light hand. A Michelin star for a room that feels anything but ceremonial about it.

Sixteen seats, one set menu, and a Michelin star: the math at this quietly elegant French restaurant on the Left Bank is deliberately unforgiving. The chef trained for years alongside Hélène Darroze before going his own way, and the cooking lands somewhere between French classicism and Japanese precision, with seasoning that makes you pay attention. Book early, dress accordingly, and let the low-profile team do their work.

The name translates to "summer snow," and the oxymoron is a fair warning: this is a Michelin-starred Franco-Japanese restaurant where nothing sits comfortably where you expect it. The chef trained at Taillevent and the George V before channeling that French classicism through Japanese precision, with fish and vegetables arriving straight from Brittany. The result is quietly striking food built on contrast and restraint, where the barbecued notes sneak up on you.

Guillaume Sanchez is the heavily tattooed chef you've seen in food circles, and his Michelin-starred tasting counter in the 9th is exactly as theatrical as that sounds. Black and gold interior, open fire doing most of the heavy lifting, fermented vegetables and cold-steamed extractions setting a mood before the more explosive moves arrive. Sitting at the counter puts you in the middle of it, which is the point.

A vaulted cellar opposite the Palais Royal, one long communal table, and a Franco-Israeli chef whose résumé spans the George V and private fashion houses. The Bay of Morlaix fills the windows at this Michelin-starred restaurant in coastal Finistère, which gives the room a quality of light that would distract from lesser cooking. The chef came home to Brittany to run it, and the menu follows suit, shellfish and small-boat catches sharing the plate with lamb and vegetables from the inland hills. The macaroni stuffed with black truffle and duck foie gras tells you everything about what kind of cook Jean-Louis Nomicos is: rooted, sensory, unapologetically indulgent. Breton Seafood
Arched windows frame the Île de Batz across the bay, and the stone fireplace does the rest of the heavy lifting inside this one-Michelin-star dining room at Hôtel Le Brittany. The chef's Breton seafood leans on the finest local produce, then takes unexpected detours into Japanese flavor combinations, a detail explained by his wife and sous-chef, both Japanese. The result is a menu that feels grounded and quietly surprising at once.

A cobblestoned street in Rueil-Malmaison is an unlikely setting for a Michelin-starred modern restaurant, but the chef trained under Robuchon and Alléno, so unlikely is kind of the point. Tasting menus lean heavily on vegetables, many grown locally or foraged by the chef himself from a nearby island. The lunchtime menu keeps prices earthbound. It's the sort of place that makes the suburbs feel like a reasonable argument.

Bare white walls are the whole design statement at this Michelin-starred fine dining room in the 16th, which turns out to be the point: the chef, a Japanese cook who fell hard for French cuisine, fills the blankness with a surprise tasting menu built around Normandy shellfish, Breton fish, and the occasional hint of binchotan smoke. Modern French
A Michelin-starred restaurant in the 15th where a Japanese chef works through a quietly inventive French seasonal menu, with shellfish threading through nearly every course, raw, cooked, or pulled into a broth. The cooking is precise and unfussy, the kind that reads modest until something clicks and you realize it isn't. Lunch brings a shorter menu at a gentler price, which is when the regulars tend to show up.

Named for the ship of a polar explorer, this Michelin-starred restaurant inside Hôtel Castelbrac sits on a panoramic terrace with Saint-Malo floating in the distance. The chef grew up nearby and spent years cooking elsewhere before coming home, and the menu reads like a record of that journey, shaped by hand-dived shellfish, seaweed, and whatever the local coast offers. The desserts, by most accounts, are the moment people stop talking.

The French oak tables were sourced with the same care as everything on the plate, which tells you something about how Gaëtan Gentil runs this Michelin-starred fine dining room in the Confluence quarter. The open kitchen anchors the space, turning out seasonal French cooking built around Rhône Valley produce, wild herbs, and sauces that do serious work. Nearly a thousand organic and natural wines round out a meal that manages to have a conscience without making you feel lectured.

The dining room inside the Park Hyatt Paris-Vendôme was designed by a Franco-Mexican firm, which gives it a quietly unusual warmth for a hotel restaurant on the rue de la Paix. Jean-François Rouquette, who came up through Taillevent and Le Crillon, runs a Michelin-starred kitchen here built around obsessive sourcing and restrained technique. The cooking is modern French fine dining, the kind where the produce is the argument and the chef mostly stays out of the way.

The long, narrow room uses earthenware, concrete, and wood to say something about the food before a single plate arrives. This is a tasting-menu restaurant in old Lille, holding a Michelin star, where the chef threads between invention and classical instinct with what he calls uninhibited cooking. The results are quietly confident and surprisingly full of personality for a room this serene.

A pink sandstone facade across from the train station sets modest expectations that the kitchen quietly dismantles. This is a Michelin-starred modern restaurant where the menu shifts constantly and the sourcing is almost ostentatious in its precision, abalone hand-harvested by divers, fish tracked to specific ports, a cheese trolley stocked by master affineurs. Surprise menus keep regulars guessing, which is presumably the point.

Two dining rooms that couldn't agree on a decorator, one all bare stone and natural materials, the other a full-blown explosion of color and dried flowers. The name means "roots," and the chef takes that personally, building a short, modern tasting menu around small Breton producers and a kitchen trained by Guy Martin and Thierry Marx. Modern French
A glass-roofed courtyard draped in flowers sits hidden off the Place du Capitole, which is not the kind of thing you expect to find behind a square that busy. This is fine dining, Michelin-starred, with hardwood floors and a wine cellar to match. The chef trained with some serious names and brings a classical sensibility to modern French cooking, finishing certain dishes tableside in a way that stops conversations at neighboring tables.

The name nods to the partnership between the chef and the sommelière, who run both the kitchen and their lives together, which is either very romantic or a lot of pressure. A Michelin-starred fine dining restaurant in Cabourg, it splits into two spaces: a tasting bar for shareable plates drawing on global influences, and a quieter room for longer tasting menus rooted in Normandy's larder. The calvados soufflé tarte Tatin is the one dish worth steering toward.

A river cuts through the grounds of this elegant country house restaurant in the Burgundy hills, which earns its Michelin star through cooking rooted in classical French technique. A small modern tasting-menu restaurant with a Michelin star and a quietly improbable backstory: she's from Brittany, he's from Sardinia, they met in Corsica, and they landed in Bordeaux. The weekly-changing menus lean into Italian instincts without becoming a love letter to the homeland, landing somewhere more interesting. Langoustines, spider crab, and pigeon show up when they should. The lunch menu keeps the ambition but eases the math considerably.

Perched on Fourvière hill with Lyon spread below it, this Michelin-starred fine dining restaurant is the house that Christian Têtedoie built in the tradition of Paul Bocuse. The cooking runs classical French through a contemporary filter, and the menu reads a bit like an abstract art catalogue, which is very much the point. The lobster casserole with calf's head cromesquis, cheekily rebranded HTV, has become the kind of signature a chef earns over a lifetime.

A Michelin-starred tasting menu built around house-made pasta, which lands differently when half the kitchen grew up in Sicily and the other half in Milan. The dining room is meant to look like a forest, and it mostly succeeds: slim trunks divide the tables into little clearings, a foliage canvas covers the ceiling, and walnut wood runs underfoot and across the tabletops. This Michelin-starred fine dining room, inside a hotel in the Val-Claret resort, takes its name from the brown bear still wandering these Alps. The chef trained under Jean-François Piège and now turns mountain herbs, game, and freshwater fish into creative Alpine cooking that follows the seasons closely. This is a grand seafront hotel on La Croisette, polished to a Forbes Five Star finish and freshly restored by hundreds of French artisans. During the film festival it becomes the unofficial industry headquarters; outside those two weeks, the bar still fills with people who travel with staff.

The ski-in, ski-out entrance sets the tone: staff are waiting at the door to take your equipment before you've caught your breath. This is a Forbes Five Star palace hotel dressed in Austro-Hungarian splendor, all hand-painted frescoes, garnet carpets, and wood-burning fires in the lounge. The rooms are few enough that nothing feels anonymous. La Mer Spa and three restaurants are on site, which is fortunate, because nothing outside looks nearly as warm.

Rank 700. Le Doyenné
Australian
The estate's kitchen garden predates the restaurant, which tells you something about where the priorities lie. Two Australian chefs converted the former stables of a château outside Paris into a fine dining room where the harvest drives the menu, not the other way around. It landed on the World's 50 Best list, and the guestrooms mean you can sleep off the wine without negotiating the drive back to the city.
